Excellent primer on sous vide cooking method

This book is a quick read and gives you an excellent overview of this method of cooking. It describes all the equipment needed and discusses the pros and cons of your equipment choices. I was interested in learning how the sous vide process works and what I needed. This book answered all of my questions. I think I will try sous vide after reading this book. Several good, basic and EASY recipies...though nit really a recipie book.
