Various is the correct author for any book with multiple unknown authors, and is acceptable for books with multiple known authors, especially if not all are known or the list is very long (over 50).
If an editor is known, however, Various is not necessary. List the name of the editor as the primary author (with role "editor"). Contributing authors' names follow it.

This book is more of a coffee table book, thanks to its size and the fact that its loaded with pictures. Having said that, I don't know who would put this on their coffee table as parts of the book are disgusting.
The pictures are plentiful and there is a brief description on each one. A lot of these I had never seen so it was interesting. The text is kept to a minimum, but I did find some of it interesting.
This is great for people who are really into this type of thing. But the book is way overpriced.
