Hugh's River Cottage Veg Every Day! became the UK's best-selling vegetable cookbook, persuading us through sheer temptation to make vegetables the mainstay of our daily cooking. In this much-anticipated follow-up, Hugh delivers more irresistible recipes, and this time, takes things one step further. Fuelled by his passionate belief that plant foods should be the dominant force in our kitchens, Hugh has put cheese, butter, cream, eggs, and refined flour and sugar firmly to one side. Instead, he uses veg, fruit, whole grains, nuts, seeds, spices and cold-pressed oils to explore the length and breadth of what can be achieved with natural, unprocessed plant foods.
River Cottage Much More Veg! makes it clear that unadulterated ingredients are the very best building blocks for delicious and healthy meals. In typical Hugh style, the recipes are easy, utterly foolproof and delicious. All but a handful are gluten-free, and at least half the dishes require 20 minutes (or less) hands-on work time. With recipes such as Roast squash and chickpeas with spicy apricot sauce, Blackened cauliflower with pecans and tahini, Spiced beetroot, radicchio and orange traybake, Celeriac and seaweed miso broth, Seared summer cabbage with rosemary, chilli and capers, and Baked celery agrodolce.
River Cottage Much More Veg! demonstrates how easy it is to make versatile, plentiful and delicious vegetables the bedrock of your diet.

During River Cottage Spring (2008) Hugh helped a group of Bristol families start a smallholding on derelict council land.
The experience was so inspiring he decided to see if it would work nationwide, and Landshare was created to bring keen growers and landowners together. The movement now includes more than 50,000 people.
Having really enjoyed Hugh's Veg book so much I was really excited to find this one in the library. There's a tomato risotto recipe in here which is lovely but other that there really isn't anything I would want to make other than dishes I already make which are very similar. There are lots of recipes in here that if you cook you'll probably have done before, tomato soup, roast vegetables, vegetable stew, hummus, chilli, potato wedges, more stews.
There is a photo with each recipe which is a must have for me. Nothing particularly grabbed me or looked very tasty, a bit bland for my liking but this might work well for someone who was new to cooking vegetables. It's a pity because I really like the layout, the photography, and I like the way the recipes aren't too complicated or require unusual ingredients. It's all very wholesome and I wish there was a few more dishes that were a bit more fun or tasty. Perhaps Hugh used all the good ones up in his first book.
It sounds like Hugh has created a vegan cookbook, but the blurb makes me laugh because it seems as though they've gone out of their way to purposely not use the word vegan, while still stating that it's basically a vegan cookbook. Ha!
Lovely recipes. Adaptable and useful. I love the curry paste in particular. Since I am dairy intolerant this book makes for some lovely dinners. I wish there were more speedier mains as well. Maybe I keep loosing myself in the slow cooking ones, but during the week I don't have as much time as I'd like for a lot of these meals. Small thing only as the recipes work, are creative and make a great addition to my shelf and repertoire.
I already own the first river cottage veg book which I was already obsessed with but THIS is a veg lovers dream come true!! As someone who eats no meat and weaning off dairy completely I appreciate a cookbook like this with an abundance of interesting full bodied meals containing veg and grains with dairy substitutes. All the recipes and accompanying photos makes me drool. Yum.
No dairy doesn’t have to mean tasteless or boring! This book is insanely perfect. Thank you!!
More vegetable wonders in this second volume with a similar lay out, scrumptious recipes and delectable information. I like the first book better, not quite sure why. Would be wonderful to eat like this everyday but I garden in spurts if at all and am not always as inspired in the kitchen as I could be...which is why I like to peruse cook books!
One of my best cookbooks/reference books and reminders that whatever your views on meat, dairy, carbs, or any other aspects of your diet, the one thing we all need is much more veg - a greater portion of our plate. The more colours and range the better. Also not to boil or microwave the life out of them. Excellent recipes - if followed leads to a better health and better life.
Read through this cookbook after getting it from @Erica (hello) and it all looks delicious! I've already made the almond-oat-banana thickie and loved it, and am looking forward to trying the rosti as well as many other dishes. This has inspired me!
I've bought a lot of recipe books I didn't use much. This one is so good. It's now my go to recipe book, because every dish I've made from it so far has been both delicious and relatively easy to make, so I have a lot of confidence that I'm likely to enjoy any dish I try from it.
This joyful book is my favourite recipe book from this year, and the one I have cooked most from. The recipes I have tried are simple and taste great, and there is much more for me to explore in this book. This books shows you lots of exciting ways with vegetables using ingredients which one is likely to have. Most recipes have suggested swaps as well.
Excellent vegetable cookery book! It has some very different ideas for use as main meals or as side dishes. We use this book regularly & have had some delicious meals using this book.
