This book gave some basic insight to fermentation, what it is, why it works, and how to ferment a few vegetables: sauerkraut, pickles, kimchi, and tomato salsa. The instructions were easy to read, but would have been more effective if they had been reinforced by photos. I would like to know which vegetables work best for fermentation; for example, there are cucumbers that lend themselves to pickling better than others. I thought the recipes offered in the back would be fermentation recipes for different types of fermented vegetables or how to make different versions of fermented vegetables, ie: dill pickles versus sweet pickles, various kinds of salsa, etc. The recipes offered use homemade fermented products in the recipe. Again, photographs of the dishes would have made the book more appealing. Also pros and cons of fermenting versus canning and freezing would have been a useful addition. This is a quick, read in an hour, 'how-to' book, but I will be looking for additional resources before attempting this project.

This is a good book to lessen the feeling of being overwhelmed when you're just starting out with fermentation. It's got a few simple very basic beginner recipes explained in a very simple straightforward way. For someone like me who was always a little nervous about trying to ferment at home this definitely helps me feel more comfortable with trying it a little bit. It's very short and great for a quick introduction.

Overview

This is an interesting book, but as a vegan I found the recipe not applicable. Tone of the book was quite conversational.
