From the world-renowned chef and celebrated artist, a must-have collection of everyday and elegant chicken and vegetable recipes
The legendary cooking teacher whom GQ calls “the most impactful living chef in America” shares his favorite chicken and vegetable recipes from a half-century career spanning two continents. Some, like Poulet à la Crème and Baker’s Wife Potatoes, recall the country French dishes of his childhood, while Chicken with Cognac Sauce and Velvet Spinach come from his days in fine French restaurants. Most, though, are born in his contemporary Connecticut kitchen. All have that trademark Pépin touch: made with just a few steps but sublime enough for company, from Roast Split Chicken with Mustard Crust to Caramelized Tomatoes Provençal. Charmingly illustrated with Pépin’s paintings, this little compendium is perfect for revitalizing every cook’s repertoire.

I normally like cookbooks that offer a wide selection of different recipes rather than specializing in a specific category. I really enjoyed this cookbook because it gave such detailed, well-written instructions and comments about how to successfully execute the dishes. These are simple techniques and the ingredient lists were short and flavorful.
I made the Crusty Chicken Thighs and Mushrooms and they all loved it. And they don’t like mushrooms!
I also was pleasantly surprised by the Pepin’s drawings - I had no idea that he was also a painter.
I found this at the library. I’m getting my own copy.
I picked this book up because I saw the cover illustration. I'm so glad I did! There are some amazing recipes. I have tried one and have fallen in love with it. If you like French cuisine this has some great chicken recipes and my vegetarian friends loved the bean dish I recently made from this book!!!
The chicken recipes are outstanding. Using cognac in a sauce for many receipesisafavoritebecause of the added flavor. Cauliflower recipes are new , interesting and anxious to try. A good read!
Recipes are questionable. I gave it such a good rating because (even though normally it's give a recipe book horrible ratings for this) I loved the art work...they were not pictures of the dish (which is a pet peeve of mine in recipe books). These pictures added to the charm of the book.
Love Jacques Pepin's recipes they are simple concise and delicious. I thoroughly enjoy reading through these recipes since I cook a lot of Poulet and Legumes at my house.
I got a chance to see Mr. Pepin at a food conference. I went to his book signing and met him and his daughter. A delightful cookbook that he illustrated!
A compilation of recipes for chicken and vegetables gathered from other cookbooks and writing of Chef Pépin. The recipes are uncomplicated. If you’ve ever watched any of this chefs videos (see Facebook), then you will recognize that he writes his recipes just like he speaks. It makes the recipe seem so much more personal, approachable, and do-able.
