Also valuable is a list of the top 15 recipes for calcium, vitamin C, and iron, plus an up-to-date chapter on pregnancy, infants, and vegan children.
This is hands down one of the best cookbooks i own. none of this chocolate cake hipster cookie garbage (even though i love cookies). i don't like to cook that much outside of rice, but this book has tons of hearty easy to cook meals that are really amazing. the lemon rice soup is one of the best things ever. for real! get it! get it! get it!
If you own only one vegan cookbook, this should probably be it. It doesn't have fancy layout or images and it does feel somewhat old school but the recipes are easy and straightforward offering lots of varied, practical and delicious dishes to make full meals that aren't trying to merely represent/recreate something not vegan. Then, the book is packed with smart, thorough nutritional information. This book really helped me in my first two years as a vegan to understand my nutrition and feel sure of my food choices.
This is also a good cookbook for non-vegans who just want some ideas on how to make veggie dishes that don't rely on cheese and butter, or cut some dairy from their diet. I especially love the simplest recipes in this book, such as Red Hot Zucchini.
It is Simply vegan. This will get you some good ideas for vegan meal creations if you are starved of creativity or knowledge about what might meld together in vegan cuisine. A good starter, but blase. A useful note: the author is a doctor of nutrition and the third edition also includes some nutritional charts if that's your sort of thing... perhaps my attention span is too low to appreciate that, though. This book includes both nutritional information and recipes. The nutritional information seemed decent. However, I made two recipes from this book and did not like either. All of the recipes in this book appear to be very fast and easy but maybe not tasty. What I found most interesting was a list of various vegan foods with some information about them including their origins.
