I'm highly skeptical of this book because at least two of the recipes are poorly written and I question if they were even tested. This makes me not want to try any of the recipes! The way the King Ranch Casserole recipe is written will be guaranteed to result in a burn error. Also with the Orange Chicken and Vegetables the amount of time suggested to precook the ingredients (diced chicken and frozen vegetables) will result in them already being fully cooked so to further pressure cook them for 5 minutes would reduce it to mush. I notice this book is also NOT authorized or recommended by Instant Pot on their official list, not surprised.
I'm looking at the POPPY SEED CHICKEN CASSEROLE on page 42. Since you're to put the ingredients in a baking dish, this looks like pot kin pot cooking. If I follow the directions exactly I think I'm heading for disaster! Having some experience I know that to getbthe baking dish out is going to be difficult without a foil sling or some other way to getbit out without getting burnt! Other pot in pot recipes call for a trivet under the baking dish, & this recipe doesn't call for any water, so I'm very sceptical. I'll try it with a trivet, a foil sling, & a half cup water so it will get up to pressure. Has anyone tried it the way it's written?
I made the "Pesto Chicken Meatballs & Penne" on page 45 & the penne stuck to the bottom of the pot & burnt. Not a great recommendation.
