I never expect any cookbook to bat a thousand and this one is no exception. Some of the recipes just aren’t for me. But I also feel that if I can come away from any cookbook with a flat-out fabulous winner, it’s worth the money. The carrot cake recipe is just that: a flat-out fabulous winner. Moist as all getout it tastes deliciously decadent without the guilt. Who can argue with that? I recommend this book, not just for the carrot cake but also for other recipes and also the notes and advice. And the carrot cake. Definitely the carrot cake.
I am curious about trying new kinds of flour, and I made the recipe of the carrot cake (and made the mistake of using only coconut flour instead of mixing it with almond flour, it was still edible, though xD). I found that this book was a nice and easily understandable way to dip your toes on healthier bakes. My mum has diabetis and I try to find recipes that are good for her.
