We've tried to hide it, shoving carbs aside for cauliflower rice and zucchini noodles, but we're not fooling anyone. Carbs are what we want – what we really, really want. We love them because they make every meal better. And anyway, global medical guidelines now say carbohydrates should make up 50% of our daily food intake, and that skipping them could lead to long-term health issues. What have we been thinking? It's definitely time to embrace carbs in all their guises. Macaroni and cheese is (practically) a medical requirement.
Whether you've always been a die-hard carb lover, or you'd like to learn to love them again, this book has the recipes you need. There are rice bowls, pizzas, pastas, tacos, muffins, loaves, and oh-so-many ways with the glorious potato, king of the carbs (including all the fry hacks you can shake your salt at). It's time to put carbs back on the table.
It's probably fair to say there are very few books I open as frequently as this one. I came here from The Joy of Snacks with already very high expectations and was not disappointed - this is the perfect food writing for me.
While I obviously cook from this book, I also really enjoy it as reading material. There are cute anecdotes, fun descriptions of locations and puns galore ("What the World Kneads Now" as the title of the first chapter is a strong start in my opinion - prepare for bread). Reading my way through this, I am always captivated and transported to a very happy place in my head. If you love food, both preparing and eating it, this book is well worth a read.
In terms of the recipes, it's difficult to pick any favourites. I'm certainly a big fan of: - banana nut matzo brei - potato farls - smothered cabbage - curry sauce for chips - and the chocolate/fig jam/nut butter toastie.
I eat a plant-based diet and found it quite easy to adapt many of the recipes. And the remaining ones, I just read for pleasure, and still enjoy them in my imagination.
