Various is the correct author for any book with multiple unknown authors, and is acceptable for books with multiple known authors, especially if not all are known or the list is very long (over 50).
If an editor is known, however, Various is not necessary. List the name of the editor as the primary author (with role "editor"). Contributing authors' names follow it.
Note: WorldCat is an excellent resource for finding author information and contents of anthologies.
Quite understandably, most of the world's greatest speeches (according to this book, at least) turn out to be political in nature. It is those speeches that have moved thousands of people and impacted millions of lives. The speeches provide a rich commentary on the times and places they are from, and are a delight to read if you are also looking to hone your monologue skills! That apart, not a must-read.
I honestly feel this book should be embedded in the syllabus for students. It is absolutely essential to know these speeches and the power those words had over the populace of that time. It gives us ample ammunition to think and imagine how these speeches must have shaped mass behaviours and therefore history.
