Definitely a cool book to start incorporating more vegetables into meals. After trying some recipes I’ve modified them to fit my taste better - a cool experiment to go through and try to cook different veggie dishes. I try to add some cricket protein powder, hemp seeds, and other sources of protein and other nutrients to some of the dishes as well
First off, this is not a vegetarian cookbook. While there are plenty of vegetable-focused dishes, I felt a handful oh the recipes featured meat or seafood as the main attraction. That being said, I’m not a vegetarian myself, so this wasn’t an issue for me. The book includes a mix of very basic dishes, like roasted cauliflower, but also offers a good selection of recipes I hadn’t tried before and ended up really liking.
One of my favorite cookbooks right now. It is NOT a vegetarian cookbook. But it makes vegetables the highlight and focus of the meal and has taught me what to do with a variety of vegetables in the store that I didn't know how to prepare.
