I am kind of amazed by how many empanada recipes that there actually are! Granted there are several recipes that appear to be very similar in terms of ingredients. What I did like was the inclusion of both sweet and savory recipes. There are also many different choices for wrappers such as frozen puff pastry or premade biscuit dough to made from scratch dough recipes. There is in fact almost too many choices included here but overall I would consider this a pretty decent reference for making homemade empanadas. Many easy and straightforward recipes.
Crap. This makes the second cookbook by this "publisher" I've gotten suckered into, and it's as useless and bizarre as the first one.
This book, like their others, seem to be just random recipes pulled off random websites with some minor formatting and word changes applied. Slick way to get around that only the phrasing and presentation of recipes can be copyrighted, not the recipe itself. And they apparently think ANYTHING shoved into any kind of dough -- be it canned biscuits, grocery store pie dough, bought puff pastry, etc. qualifies to be called an empanada.
It's possible some of the recipes might taste OK,, but it would be a complete crap shoot to figure out which . It's completely useless to me since I was looking for tips on making a better dough for real empanadas.
As the title explains, this cookbook is devoted to a wide variety of empanadas. The recipes are clearly written, however in some of the recipes early in the book, it doesn't tell you whether the oven should be preheated or cold. I defaulted to preheated because that is the usual practice. The empanadas turned out fine. All the recipes include preparation times and nutritional information.
The book is disorganized, as if the author(s) put the recipes in the order they found them. The book would be easier to use if they had at least separated the recipes by sweet and savory. Other issues include using a light-colored font for the directions, making them are to read against the white page, and incomplete bolding in the ingredient lists. For example, one recipe calls for several kinds of sugar, but only the word "sugar" is highlighted.
These recipes come from a variety of sources, including individuals if the titles are accurate. I would have appreciated an introduction to each recipe explaining its source or history and why the authors chose to include it in the collection.
Downloaded this little cookbook for free off of Prime. I really liked the simplicity of the recipes. Many were made with pre made biscuit dough, pie dough and even pizza dough. Others included homemade dough in a variety of ingredients so not all were the same. Also included a good variety of fillings both sweet and savory. My husband is always looking for ways to pre cook lunches to save a little money. These would also be good in place of the uncrustables I'm sure my kids are getting tired of. Would have liked to have seen pictures added. All cookbooks should include pictures!

Each reciep starts with a title and has a list of ingredients and you should be able to substitute for your healthier dietary needs: low fat, low sodium, low sugar and fresh vs canned items. Some contain a LOT of items even canned, be sure to have them all first. Directions are given and there are NO pictures. Servings, prep and total time. Some nutritional information per 2k calorie diet: calories, fat, cholesterol, sodium, carbs and protein. So many to choose from. Great flavor combinations. Appendix has a bonus spice mix recipe.
A lot of the recipes make use of premade doughs for wrappers: biscuit doughs, pizza crusts, puff pastry, pie crust, ... This cuts time and effort immensely. The fillings are mostly meat based but can be easily tweaked for veggie lovers. There are also dessert options listed. The recipes aren't complex, and would make great "assembly line" family prep dishes, with each person given a task. That's how we did them, anyways lol.
Found on FreeBooksy, this is a fun recipe book, a nice addition to a collection, but not fast and easy - allow some time. Corn biscuit, Winter Frost, and Chicago appear to be the forerunners for my own personal interest :-) lots of interesting ideas, some YUMMO, some not so much, but that's with any recipe book
Liked some of the recipes. Noticed that some of the serving sizes at the end were wrong and I think they were thinking of "yields" as of how many pieces will I have by making the recipe instead of "serving size" which means if I eat one, this is the amount of nutrients I'll get; some recipes had "1" and some others "24", am I supposed to eat all of them?
Wow! So many recipes to try. About 15years ago I made empanadas with home made dough the first time and I loved them. Now I have more that will be fun to try.
