This cookbook is everything - beautiful, easy to read, so very informative without being too complicated, and filled with great recipes for any home chef. The way this book is laid out is wonderful. I love the way Mickey writes about food and nutrition. If you own one cookbook - it should be this one!
The day I received the book I tried a chicken and mushroom recipe. Within the week I had made 3 recipes without needed going to the store to get any special ingredients. I was able to use what I had to create 3 gems. I haven't made anything I didn't like and everything I ate truly felt very nourishing. For a year now I've eaten whole foods with a focus on low glycemic index. This cookbook is THE first that allows me to eat within my limits. I'm truly grateful to Mickey. She also has great podcasts you can follow! I love her autoimmune focus. I don't have a known autoimmune issue but to be healthy I can follow her understanding of why the foods for AIP are better than others and utilize them to focus on overall health. Mickey always makes things easy to understand and that makes it easy to use and implement. Again...I'm just grateful for the best cookbook for our time.
This is one of the most comprehensive collections of recipes and information I have ever found on the AIP diet. The photos are gorgeous, the information is useful, written in familiar terms that a novice or experienced cooker can understand. Most of the ingredients are easy to find - and when they aren't, the author gives alternatives and ideas where to find them. Many recipes are kid-friendly which makes cooking for a family while trying to maintain an AIP-compliant diet much more feasible. I feel healthy and energetic eating this food and I can't say enough good things about how much I love this book.
In the two months I've had this cookbook I've already tried nine recipes, and there are several more I plan to cook soon! Mickey has a gift of using her culinary talents to make nutrient dense foods tasty and satiating. If you're on the Auto Immune Protocol and feel trapped by the tight restrictions and monotony of the same basic meals over and over, I highly recommend picking up this cook book. This is also a great resource if you have food allergies in your family or get frustrated when trying to invite friends with food restrictions to your table. My husband and I have enjoyed the recipes as written, but we've also found it easy to incorporate ingredients we tolerate that aren't allowed with strict AIP. Buy this book and you'll be eating well!
There's a chart near the front that lists the nutrient value of foods, i.e. The highest source of Iodine is Kombu or Wakame (p30) But one ingredient she uses a lot, Cilantro, is not listed at all on that chart at all, yet she puts Cilantro in almost all the recipes. At the recipe for Cilantro salsa she does say: "This tasty herb contains not only a good amount of vitamin K, but has medicinal properties like supporting livery function and fighting infection." That's nice, but I hate cilantro, it tastes like soap to me. Something like 20% of the population have the same genetic combo. So though there are some interesting recipes, due to the heavy use of cilantro, it's not the cookbook for me.
Lovely cookbook with loads of info, but very specific diet wise, and lots of ingredients I would probably not keep around. Loved the sauces + dressings chapter.
