This is a very good book. There's an awful lot of information in the opening chapters and you do need to read this before you get on to looking at the recipes. I am struggling a bit in following the advice as it's so expensive to buy the foodstuffs you need if you are to cook without ordinary flour, potatoes, rice, pasta etc and replace them with something different, and the recipes seem to take ages to cook. That said, I think it is still a very good book.
