Chapters are broken up into meal categories. Introduction starts this book off where it gives you information about the different settings. Also information about beyond the basics are included. Each recipe start with a title, prep and cook time, servings and list of ingredients which you should be able to substitute for your healthier dietary needs: low sodium, low sugar, low fat and fresh vs canned items. Directions are given for the mini pot-3 quart size so there's no reason you can't use this with your bigger pot as well. Nutritional info includes calories, fat-NOT broken up into good or bad, carbs, fiber and protein. Recipes do NOT start at the top of a page. Some recipes have ingredient list spaced out more than others-not sure why the different format. Some recipes-from another source? also include sodium in the nutritional information. Measurements are not consistent: sometimes oz. sometimes ounce.
I have not made any of the recipes yet but I have marked a whole lot. I especially like the fish recipes and the fact there is nutritional information.
