Various is the correct author for any book with multiple unknown authors, and is acceptable for books with multiple known authors, especially if not all are known or the list is very long (over 50).
If an editor is known, however, Various is not necessary. List the name of the editor as the primary author (with role "editor"). Contributing authors' names follow it.

Loved that these classic Thanksgiving short stories were available free via the Hoopla app. I enjoyed the stories by Louisa May Alcott, Harriet Beacher Stowe, O. Henry, and L. M. Montgomery; I wasn't a big fan of the stories by Nathaniel Hawthorne or George Eliot.
This was interesting in that all of the authors are famous for other works in their own right. It was interesting that each wrote a short Thanksgiving themed story. Each has their own style and feel.
