A tutorial for those of us who cook because we have to and how our mothers did! If you want to know the whys and wherefores of adding salt, the differences in fats and oils, the usefulness of a zing of acid - lemon/vinegar, or the various ways heat cooks your food, then this is the book for you. I have been doing all these things for years but it's nice to know the science behind it!

My sister recommended me this because I want to learn how to cook and she’s a cooking badass and once I finished this book I told her and she said “There’s a book? I meant watch the Netflix series”

Good book though, it teaches you the very fundamentals of getting good flavor and texture out of food. It’s also kind of funny, I liked the author!

The content and presentation of materials are all five star. I was a little bit skeptical about how this book would go, but much to my delight and surprise, this book checked all of my boxes.

Highly recommend.

It unlocks the chefs secrets all in one book. Time to throw away my recipe books and start thinking about food and cooking differently through taste and salt, fat, acid and heat.

As a keen, largely self-taught cook, this book excites me! I have been playing more with balancing flavours and going off-piste in my cooking, but this will give me the tools to develop my skills further. Can’t wait to get started!
