Pamela Ellgen’s The Instant Pot Meals in a Jar Cookbook: 50 Pre-Portioned, Perfectly Seasoned Pressure Cooker Recipes is fabulous for any cook, but there are two types of families who will especially adore this cookbook.

Single parents will appreciate being able to assemble a meal with dried ingredients up to three months in advance, put it in a jar and then get a quick meal on the table with the addition of water, broth and an extra ingredient or two. In some cases, all you need to do is add water! You could put together a half-dozen — shoot! a dozen! — and eat at home even on your busiest night! Whether you’re on a budget or not, who doesn’t love saving money while eating wholesome?

The second type of cook would be people like me. I’m the cook in the family; wouldn’t it be great if you could assemble a meal in a mason jar (the hard part) and then get your not-so-savvy spouse to put it in your pressure cooker (electric or other), add the liquid, set the time, seal the machine and then forget it? My husband’s usually home before I am, and it would be wonderful to get dinner started an hour or so before I get home.

There may be a cook out there who wouldn’t love to have the make-ahead flexibility at least once in a while, but I don’t know who that would be. Highly recommended.

OK, I've made two recipes in two days from this book and there's plenty more that I want to try. Best of all there's not a mac&cheese recipe in the book. It's different. That's awesome. It's mostly make ahead. Woo hoo. If you have a vac sealer, don't waste money on jars - your vac sealer is cheaper and better.

I think there's problems with the amounts of liquid in some of the recipes - at least the ones I tried. The amount of liquid was off in both. But I can fix that the next time I make them. And I will. Because they tasted great.

And now I'll finally put my dehydrator back to use.

Great use of spices and practical recipes

I like the adventurous use of spices in international recipes. I wish some of the recipes for 8 or more gave a hint how to make a jar for a smaller crowd. I have had the misfortune of applying straight fractions of ingredients, to disastrous results. At least my wife will not be able to complain about the ugly canisters with these beautiful jars on the counter. :)

As a nutritionist and mom of teenage athletes, weeknights can be extremely challenging and regular go-to meals eventually lose their appeal. The Instant Pot has always been a lifesaver but the make-ahead ideas in this cookbook are both simple and fascinating—I am inspired to try every last one of them! This is perfect for inviting a healthy variety of ingredients into a busy lifestyle, and even incorporate some restaurant-style meals at home in minutes.

Borrowed digital book from Hoopla. Layout was a bit wonky as the title of the recipes ended up in the page prior...changing font sizes did not fix.

Really like the idea of this. It's like hamburger helper for the IP. Quick cook...just dump and go! Hopeful for lots of useful recipes but Found only 1 recipe that I thought I would use and that my family would enjoy.

I liked the premises of the book. But I will probably have to wait until next summer to use the recipes. My supply of dried vegetables is too low to make many of the recipes. They all sound good and will save so much time. My husband is a disabled Vet and we spend a lot of time on the go with doctors appointments and errands that this will make eating at home easier.

I found the idea of prepping the dry ingredients for my pressure cooker (I use a different brand than Instant Pot. It works perfect.) a good idea.
I'm thinking of prepping some for a friend who I know has the same cooker I have too.
All I need is to purchase some jars with lids and I'll be ready to prep and cook.

Great ideas

This book has great ideas. I have a dehydrator and do dehydrate a lot of vegetables and fruit that are sitting around. So this is a great information of ways to use the dried ingredients. I have often times in the past given guess in a jar. This book offers a lot more variety.

Great Recipes!

Cannot wait to get started gifting these meals in a jar to my Instant Pot family members. The recipes are simple, delicious, and look pretty in the jars. I did have to search a bit for the dried veggies but it was worth it!

I like the ideas of using my instapot but honestly there were only three recipes that I would use because there were a lot of foods that I just didn’t like and would not eat. However, there are many people that would benefit from this book and the recipes.
