Muffin Cookbook is a recipe book by Barbara Riddle. There are thirty recipes, all dedicated to muffins. There is a photograph alongside each recipe.

One of my first thoughts about the book is that some of the information the author provides isn’t entirely accurate. For example, the first recipe is “Healthy Blueberry Mini Muffins”, in which the notes before the recipe say, “They are also sugar-free and vegan.” However, maple syrup does have a sugar content. I think what the author means is that you don’t add sugar (like white sugar, or similar) as is to the recipe; but they word it in a very misleading way. There’s also a tip in the introductory area that says to add more flour if the mixture is runny. However, that’s not really a good tip. In my baking experience, some muffin mixtures can be runny before putting them in the oven, and they can turn out absolutely fine if you cook them for the right time. Especially if you’re using ingredients with a high moisture content. But, if you add flour that the recipe doesn’t call for, that means that the muffins can end up dry at the end of the process.

I think the author does a reasonable job trying to add enough information to ingredient listings. However, there are times when they don’t have all the information. Such as in the second recipe, they list to use a cup of sugar for the batter of the muffins, but don’t say what type of sugar. And sometimes they don’t list the size of eggs needed. There are times where they don’t say what type of milk to use (there are lots of different kinds of milk), and sometimes they’re not specific as to whether to use salted or unsalted butter. However, other than that, I feel like a lot of recipes had a reasonable amount of information in their ingredients lists.

As for the instructions, the amounts of information vary between recipes. Some have a really good level of information, with all sorts of little bits which tell you how to tell whether it’s cooked, what sights or textures to look for when preparing them, etc. However, sometimes there’s very basic steps, without much of that information.

One note I will make is that I think there needs to be someone to go over the editing and formatting of the book. Sometimes there are weird line breaks. And sometimes there’s points where it seems like the recipes aren’t complete. Such as “Chocolate Chip Pumpkin Muffin”. In the instructions, step three ends with “Mix in chocolate chips.” There’s a line break, “chocolate chips.”, another line break and “28 minutes or until tester comes out clean…” It’s clear to me that there’s maybe one or two missing instructions here. It doesn’t actually say to put the mixture into the muffin tin, or to put it into the oven, but those directions ought to be there.

There are images to go along with the recipes. Though, in several of them, it feels like they’re not images of what was made with the recipe. Such as the “Banana, Peanut Butter and Chia Seeds Muffins”, which do not seem to have the chia seeds. And I did notice that several photographs provided had watermarks from blogs and recipe websites. So, just be aware that the muffins you make with these recipes may not look the same as the ones in the book.

Honestly, I think a lot of the recipes sound pretty reasonable. And I would consider making one or two of the recipes. It’s the type of recipe book that I might actually return to, at some point in the future. Though, for some of you, several of the ingredients may be a bit difficult to find, if your local supermarket(s) aren’t very well stocked, or the ingredients for some of these muffins can sometimes be expensive. So I recommend looking up prices and availabilities of ingredients online, in your local area, before making a decision to make them.

Overall, it’s an okay recipe book. It does have several minor flaws, such as little bits of missing information in the ingredients list and with the recipe instructions. It’s the type of book that I might try some recipes from in future. Although, I did think it was a little bit weird that this author is using images that are watermarked by other people, such as blogs and websites.

This book starts out with table of contents where recipes are not listed in any special order.
Intro talks about perfecting muffins, color pictures included.
Each recipe starts with a title and brief summary of the item, servings and time.
List of ingredients are included and you should be able to substitute for your healthier dietary needs: low sodium, low fat, low sugar and fresh vs. canned items.
Directions are given and there some pictures for the recipes are included. NO nutritional information.
I love muffins more than cupcakes because of the use of vegetables, squash, fruits, etc.
Can't wait to try so many of these flavor combinations.
Ends with a conclusion from the author.
A KEEPER for me because I know the ingredients I need to use to make them healthy for our family.
