As a vegan, I am always on the lookout for cookbooks with quick, easy, and delicious animal-product free recipes. This cookbook is just that! Great layout. Good food. Simple prep. Although some recipes take longer than others, I believe anyone (not only vegans) will enjoy these yummy recipes. I took a star off because I'm not a fan of instant pot recipes (not all used an instant pot); they're okay, but I don't seek them out. That being said, I was surprised how simple it was to use an instant pot, so maybe I'll start using mine more!
This is probably my favorite vegan Instant Pot cookbook, and there are surprisingly many that I've read. It's well laid out with nutritional information provided, and color photos for about 1/3 of the recipes (I really wish there were more!). I know that some of the recipes will be successful, as some are ones I already do in my IP. For instance, I make roasted cauliflower in my IP too and do it mostly the same -- put a whole head in on the trivet and set it to 0 minutes (yep, just the time it takes to come up to pressure) and then quick release. While she then roasts it with vegan butter and bread crumbs, I make it quicker and easier by drizzling with olive oil and herbs and broiling for just a minute. Still, very similar.
My two gripes are: 1) Many of the recipes call for purchased ingredients like vegan parmesan, jarred yellow curry paste, or gluten free pie crust. I cook from scratch and would prefer to use whole food ingredients or to have a recipe included. 2) Many recipes are listed as gluten free but it seems like a cheat, as she just says to substitute everything gluten with gluten free versions (purchase GF pie crust and use a GF flour blend, for instance). In some cases, it's really hard to find GF versions of the ingredients like ramen noodles or pita pockets, so those do not seem like true gluten free recipes.
Also, many of the recipes really don't need to be cooked in the IP and it seemed like a stretch to make them into IP recipes. I know that some of my friends seem intimidated by any recipe that isn't made in the IP though, and if it gets you cooking to use your IP for sauteing and to bake cookies in it, then it's a success.
All in all, this is a great cookbook though, with a clean layout and the recipes seem easy and tasty.

For the past few months, I've been working on being more healthy and dragging my family along for the ride. Part of that is moving toward a plant-based diet. I don't see us ever completely giving up meat (my wife and son love steak and sausages too much at this point and pushing too far will only make them rebel completely) but they're both on board for trying anything I make. Since I'm the one who does 99% of the shopping and cooking, there's been much more pressure to find healthful foods that they'll enjoy. As a result, my collection of vegan cookbooks has exploded. From one to about 10 and it continues to grow.
During my last trip to NetGalley, I decided to check out the offerings for vegan cookbooks and was happy to see there were two available for request! Vegan in an Instant was extra appealing because I love any recipe I can use the Instant Pot for. I'm all about fast, convenient, one pot meals.
Because I got the book through NetGalley, it's a PDF and not a glossy, paper book which will be much prettier and, for folks like me, more user-friendly. When cooking, I like to have physical books or recipes but will drag out a device if I have to use electronic. Definitely prefer the paper for cookbooks though.
Anyway, The pictures in Vegan in an Instant are beautiful and tempted me to try recipes that normally wouldn't have caught my eye. I ended up with a list of only six dishes that sounded good to me and that I thought I'd have a chance of pleasing my family. There were a few others that looked good but only used the instant pot for steaming or softening potatoes and the rest of the dish was cooked either on the stove top or oven. If I'm going to pull the instant pot out, I want it to be the only pot I use. Lazy? Maybe, but I know myself enough to know that I might note the recipe as something I want to try, but I'm not going to.
I think if you're looking for more plant-based meals and have an instant pot, you will very likely find a few recipes that will make your mouth water while flipping through the pages. You'll have to decide whether there are enough to make the purchase worthwhile.

This collection of recipes was very helpful to me – it not only explains the purpose of the instant pot well, but gives you numerous of occasions and how to’s so you can maximize your purchase. I go vegan for about 2 months every spring and autumn for lent and these recipes have been a lifesaver this past few weeks: full of fast, pool proof delicious and different meals. Honestly, highly recommend!
Overall a nice addition to the vegan kitchen, I'm always looking for more instant pot cookbooks.
Recipes are marked with gluten free, soy free, oil free, nut free for easy avoidance of desired ingredients. I love that oil free is included, as I try to avoid oil when I can, but don't see it in cookbooks often.
It gives a brief rundown of your instant pot and the settings you can use. I even learned some tips even though I've been using my instant pot for over 2 years! It also covers some good accessories to have.
Pictures to me are huge in a cookbook. I want to know what the food looks like and the pictures are usually what will encourage me to try a recipe. Personally found this cookbook lacking a bit on the pictures. Other people probably don't care about this, but if you do: Breakfast has 4 pictures of 14 recipes Entrees, soups and stews has 8 pictures of 39 recipes Salads and sides has 5 pictures of 22 recipes Snacks and appetizers has 4 pictures of 12 recipes Desserts has 4 pictures of 10 recipes Staples has 0 pictures of 6 recipes (Things like almond milk, cashew cream, broth, bbq sauce, and almond ricotta) That's only 25 pictures for over 100 recipes and that makes me sad. Loved the pictures that we in there though!
The thing I'm the most excited about is instant pot granola. I never thought that was possible and just love the idea. The book has a great variety of yummy breakfast options. With fall coming up, a nice warm breakfast being made while I can do other things in the morning is a huge plus!
As for the rest, I love the idea of portobello burgers in the IP. We make them on the grill but this literally takes minutes. Amazing idea. I also love the sloppy joes. So many lentil sloppy joe recipes don't that that more original sloppy joe sauce (many I have seen call for cumin and chili powder, not bad but just different). This was more the original and I really like that! Also there's a tomato soup from real tomatoes that is quick and easy. I'm not big on recipes that will have me using the IP and the oven. If I'm going to use the instant pot, I want it just to be the instant pot, but again that's just a personal preference.
Overall a great book! Definitely will be adding some of these recipes into my rotation.

This has a good variety of recipes that should satisfy just about any tastes. I however did not like how many of the recipes included some processed vegan alternatives such as cheezes. This is a good first vegan Instant Pot cookbook because it does have good coverage of the staple foods that can be made in the Instant Pot.
I would recommend this book as a first vegan Instant Pot cookbook.
Vegan in an Instant is a cookbook and tutorial guide for plant based meals prepared in conjunction with the instant pot. Due out 7th Jan 2020 from DK on their Alpha Books imprint, it's 160 pages and will be available in paperback format. Author Marina Delio is a food and lifestyle blogger and recipe developer with an upbeat and non-judgemental style of writing.
There are a lot of reasons to incorporate more plant based food in our diets; guarding our resources for future generations, living more simply, health and well-being, as well as philosophical reasons, not to mention taste. Using a pressure cooker can be a time-saving device but even better, it's generally a much less 'hands on' process. You can set the ingredients on the proper cooking program and walk away. I'm -not- a gifted cook and it really is that simple.
The included recipes are made with easily sourced ingredients and the instructions are crystal clear and easy to follow. The photography is not abundant; most of the recipes are not illustrated, but the photographs which are included are clear and well done.
The book has a logical easy to follow format. The introduction covers instant pot cooking as well as some general food safety and instant pot info followed by a staple ingredient list for the vegan pantry to have on hand. The following chapters are arranged thematically: breakfast, entrees soups & stews, salads & sides, snacks & appetizers, desserts, and staples/sub ingredients used in other recipes.
Each recipe includes an intro with recipe special features such as nut-free, gluten-free, etc. There is an introduction with other info such as portion control and yields followed by highlighted sidebars with prep-time estimates, cooking settings, and other info. The recipes' ingredients lists are provided with English/American measurements with metric/SI measures in parentheses. Nutritional info is provided in the footer under the recipe instructions.
The links and recipe ingredients are slanted toward the North American reader, but can be sourced relatively easily in other areas of the world with an internet search.
Three and a half stars because I really felt the lack of sufficient photography very keenly, rounded up to 4 for the completeness of the instructions and cooking settings and the author's overall supportive and encouraging writing style.

I very recently switched to a whole food plant based diet and have been looking for all the vegan cookbooks I can find. I was very excited to see Vegan in an Instant and find out what delicious meals I can cook in my Instant Pot. This book did not disappoint! I have tried a handful of recipes out of this book so far and have quite a long list of what I want to make from it. Each recipe has been quite good and fairly simple to make. You will have to try the easy refried beans recipe that is quickly becoming a staple in my house. I have not tried any of the desserts yet, but I am definitely excited too, they sound delicious and is something I had never thought about trying to make in an instant pot! This book will push you out of your cooking comfort zone, but in a guiding way that makes you excited for the next recipe.
I love the ease of the Instant Pot, but it can be intimidating and this cookbook helps a ton. It not only gives many great recipes, it starts out with basics of the Instant Pot and then a ton of great tips and techniques. There is even a section on what useful accessories you should look at getting. My Instant Pot is a whole new device to me now and I have used it in many ways I hadn't thought of or hadn't figured out how to. I highly recommend adding this cookbook to your collection, it does not disappoint.
If you have an Instant Pot because you like to dump, set, and forget to get a meal on the table quickly, this book doesn't have a lot of those types of recipes. It's mostly full of more complex recipes which may also require the use of your oven or stovetop as well as pre-cooking time (like soak time for cashews). Some recipes also have you use your Instant Pot for multiple stages, requiring cleaning of the inner pot in between. If you don't mind that kind of fussy recipe, this book is full of inventive and tasty-sounding dishes. Sometimes the ingredient lists are a bit long, and you have to have quite a spice cabinet to pull all of them off. Not every recipe has a picture, but many of them do. Some recipes do use ingredients that may require you to go to your health food store if your grocery store isn't well-stocked. Many recipes in the cookbook have international flavors. Countries represented include India, Cuba, Mexico, and Italy. This is an official cookbook by Instant Pot, so there is a nice introductory section that gives you more information about how to get the most out of your appliance. If you are a vegan with an Instant Pot who likes complex (and international) recipes, you might enjoy this book.

Vegan in an Instant is designed to help get you through the week with less stress and less time spent in the kitchen without the use of processed foods. These plant-based recipes are quick, easy and healthy. An added bonus is that many recipes are one pot meals so less time spent cleaning up. Yes! IP versions of some old familiar recipes are here such as recipes for lasagna, minestrone soup, shepherd(less) and pot pies along with simple dals, curries, kitchari, enchiladas and burritos. The recipes aren’t only for the pressure cooking function of the IP, some use the slow cooker function and there is a recipe to make yogurt using the yogurt function. The colorful photos will tempt and inspire you, I actually wish there had been more of them.
Whether you are an Instant Pot newbie or a seasoned veteran, you will find the recipes clear and easy to follow. These may not be gourmet fare recipes but they will satisfy your family and are great for casual entertaining with friends.

I really enjoyed the variety of recipes found in this cookbook. There were dishes from many different ethnicities, and there were a lot of options for different types of meals. There were definitely dishes that probably didn't need to be made in the Instant Pot, but this is an IP cookbook after all. So while I likely wouldn't choose to make it in the Instant Pot, I can't really fault her for including it. Along those same lines, you are limited to the type of meals you are able to cook, so I didn't feel it was fair to lower my rating because it wasn't extremely diverse (like having thirteen soups).
I especially enjoyed her instructions for the Instant Pot itself and the handy instructional section for each recipe. The desserts look delicious, and I am excited to give those a try, as it would be something completely new for me. I think this cookbook would easily appeal to a vegan looking to branch out in the IP a bit more, but I also think a non-vegan would enjoy these recipes. I love that she included nutritional information!

I have been on a 21-day fast with my church the last 2.5 weeks. The fast is inspired by the Book of Daniel in the Bible. Only plant-based food, no dairy, no processed food, no sugar, and no caffeine. Basically, a modified vegan diet (because of no sugar and caffeine). So, I have been looking for vegan recipes when I came across this gem of a book. Marina Delio included something for everyone: love Italian or Greek food ... she has a recipe, love queso and other delicious Mexican food ... she has a recipe, love Indian or Middle Eastern food ... she has a recipe, love sushi ... you guessed it, she has a recipe. What I love the most is that she includes recipes for every type of vegetable and grain. I have never tried jackfruit, but you know what? Those jackfruit tacos look delicious! I will give them a try. Thank you for the inspiration and also for the additional tips for each recipe!
I absolutely love this cookbook!!!! Marina did a great job teaching the readers the ins and outs of the Instant Pot, perks and tips that were directly related to plant-based cooking which is something many people, like myself, have trouble finding.
The colours to each recipe photo were vibrant and each photo inviting, which is something I wanted to make note to include in this review.
I enjoy how each recipe had a quick, sometimes personal introduction - a little tip, and also nutrition info which is awesome for anyone looking to watch their macros!
I would recommend this book to all my friends and family who own an instant pot and are interested in learning more about plant based cooking and eating. I for one will be using this book in the future!

Last year, my husband HAD to have an instant pot. He does all the cooking in the house, so I said why not? Well, you can imagine that we never use the instant pot ever (shocking).
So in my quest to eat more veggies, I had the opportunity to review an advance copy of this cookbook!
If a recipe has any difficult or "unusual" ingredients/items, my husband won't cook it. This book did have a lot of those types of recipes (for which I'll have to make when he's gone on a business trip), but it also had lots of yummy recipes that required every day ingredients!
I tried the sage sweet potato mash and the whole roasted cauliflower with garlic and herb crust. Both came out delicious! I'm excited to continue making recipes out of this book to come!
Let me start out by saying, I do not own an Instant Pot nor have I ever used one. I have been thinking about getting one, and this cookbook made me realize that I think I need one in my life. The author shows the reader just how easy putting together a meal can be! I really wish there were pictures for each individual recipe; I’m a very visual person when it comes to cookbooks, so if a recipe doesn’t have an accompanying picture I most likely will skip over it. I especially like that the prep and cook times are clearly labeled, along with dietary restrictions, it helps to know what I’m getting myself into. Overall, I believe this is a great cookbook for entry to mid-level cooks/Instant Pot users.

This book is great for anyone looking for easy vegan instant pot recipes. There are labels on the recipes to easily see which ones are oil, nut, soy, and/or gluten free. You can also easily see the prep and cook times so if you are in a hurry you can quickly glance at what you can make. Although there are quite a few photos, I prefer cookbooks with photos for every recipe. Photos are what makes me want to try the recipe so without it there were quite a few that I skipped over without even seeing what they were. Overall, it's a great book with some great recipes that are fast and easy.

A great vegan cookbook to add to our collections. As a vegan I appreciate every vegan cookbook and this is one I learned a lot from . I enjoy the pleasing layout and sensible receipes that are easy to follow. This is a great addition to your kitchen. What I love is the anti inflammatory receipes and the receipes are made for the instant pot which I use quite often in my kitchen and love experimenting with. This is healthy sensible vegan food for everyone that is either vegan, vegetarian or leaning toward being plant based.
I highly recommend this cookbook.

I was a little skeptical about this cookbook, as I use my Instant Pot for oatmeal, hard boiled eggs, and meat more than any other items. And maybe beans. But this cookbook is a treasure trove of recipes that are plant-based and plant-forward, and yet still look delicious and like my family might be willing to try them. The soups are solid, but I was surprised at how many inventive uses for the Instant Pot focused on less expected foods. Recommended for vegans and those wanting to integrate more plants in their (instant-pot driven) diet!
This is an excellent vegan and instant pot cookbook. I have found several delicious and easy recipes. I am not vegan but often need to prepare vegan food for large church activities (for those that either are vegan or have allergies). This is really a great book with a ton of usable recipes that could be converted to other cooking methods if you don’t have an instant pot. I received this book from NetGalley for an honest review.
Excellent choice for someone like myself who is incredibly excited to own an Instant Pot and continues to flirt with the vegan lifestyle. Recipes seem easy to make and delicious and with accessible ingredients.
A hardback copy of this just might find its way into my home.
Vegan in an Instant... Although the recipes are made for Instant Pot appliances, they can be altered and easily made in traditional ways like stovetop and oven. I appreciate the variety of textures, flavors, cuisine types offered for consideration. Some traditional comfort foods are included, altered a bit for the Instant Pot. Wide variety, desirable pictures, wish there were more images.
"Vegan in an Instant" turned out to be the cookbook I didn't know I wanted let alone needed! Nowadays Instant Pot everything is the way to go and honestly these recipes were terrific and fun to do. These recipes were easy to follow and absolutely delicious. This book is totally worth the price.
Quite possibly the best vegan instant pot cookbook I've looked through yet. I just look at all the recipes and think "hmmm with a bit of cheese..." I don't know why I check out vegan cookbooks.
I wanted to read this cookbook because I am trying a vegan diet and I hoped to find some great recipes. I didn’t find any new recipes that I liked in this book, but a true vegan might. Some of the recipes I was already familiar with but it was helpful to see it for the instant pot.
pretty simple recipes and sometimes over-reaching a bit, but a good guide is you are perhaps using the instant pot as your primary cooking equipment and/or have a very tiny kitchen and want to maximize it's use.
