Found this in the bargain books section at Barnes and Noble. A wonderful book for anyone using an instant pot. Each recipe requires 5 ingredients aside from items you would normally have in your pantry.
For instance: the Lemon-Mint Red Potatoes recipe needs:
*1 lemon
*2 pounds new red potatoes (11/2 to 2 inches)
⅓ cup water
*4 tablespoons chopped fresh mint, divided
1 tablespoon olive oil
1 teaspoon salt
¾ teaspoon Greek seasoning or dried oregano
¼ teaspoon black pepper
1 tablespoon butter
Items which you may not typically have in your pantry I've marked with an asterisk, in the book they are highlighted in red.
Highly recommended.

Got this on clearance at B&N. I like it because all the recipes are simple to make, and the book covers everything from breakfast to dinner, to dessert and snacks. I use my IP a lot and now, it'll get almost daily use.
