This book has some EXCELLENT recipes! I've made 8 items and only 1 was an absolute "yuck" (the cilantro soup--Eric actually didn't mind it), and the other 7 were real winners!

One great thing about the cookbook is that each meal gives the nutritional facts per serving so you know what you're getting in to. I also enjoyed reading brief histories on each dish.

The biggest reason for the 4 instead of 5 is because the pictures are outdated and not all that appetizing looking. Okay, I know you shouldn't judge a book by it's cover, but a COOKBOOK is different. Also, some of his "healthy" alternatives were no-brainers (like substituting fat free sour cream for regular sour cream). I'll bet you could find a newer, better-pictured cook book and just alter the recipes yourself to make them healthy if you wanted them that way.

That said, some of those recipes are delicious! Eric wasn't the biggest fan of the Gazpacho since he doesn't care for cold soup, but I LOVED it! and we both adored the delicious Nicaraguan marinated and grilled steak with authentic spicy garlic chimichurri sauce! I thought the cucumber soup was surprisingly refreshing, and we both enjoyed the Kale and white bean stew and were surprised that it wasn't bitter (since kale usually is). We also both loved the mango-pineapple salsa! Wow, delicious and healthy too! What could be better? :)

Very nice recipes and some photos. Great introductory glossary of unusual to traditional United States ingredients and interesting side notes to many of the recipes. Nutrition information gives the traditional caloric data and the adjusted recipe data. Many of these recipes are now on my to-prepare list. A keeper cook book for me.
