I received a free electronic copy of this excellent cookbook from TheFussyLibrarian, Bitsy Keown, and publisher, Amazon Digital. I have to brag on this cookbook - the ingredients are basic, the directions simple, and the food delicious. All one could as for in a cookbook!
But mostly I want to thank you, Betsy Keown, for sharing your bravery amongst those of us who fear the jiggling counter-weight. In my defense, my childhood home had 13-foot ceilings, and those tomatoes Mom was getting ready to can covered the ceiling of that big kitchen completely... And then my cousin blew up pinto beans. When pressure cookers were new, danger lurked. But I did your water test last night after supper. Thanks to you I am able to face my Instant Pot without remembering that blood-red ceiling, though I do still have a slight fear of things wearing skins - onions, beans, tomatoes... But tonight I'm going to make your meatloaf and potatoes. I've had this thing for several months - it was a gift from my children - and I have used it a few times, though more for slow cooker recipes and for that it is great, as well.

A new go to list of great easy dishes in under an hour!
I have read through the recipes and they all sound yummy and I have already tried a few and they are very good, I have to laugh at myself for buying a new fancy electronic pressure cooker when my old fashioned pressure cooker with the jiggling petcock would have accomplished the same results! The Instapot does give those people who fear a pressure cooker some confidence that this won't blow up their kitchen! Most of the recipes can be made in 45 minutes or less and I like ones with simple ingredients that I usually have on hand.

Great cookook
I love that the recipes and directions are so clear. I have several Installer recipe books and still have to guess at the settings and times because it isn't listed, this book tells everything!
