It seems that in today’s world, anyone and everyone who’s had a little experience in the kitchen is putting out a keto/low carb book. In my experience however, not all of these authors are qualified to do so, and one mistake in their recipe can mean serious consequences for myself health wise.
Enter Carolyn Ketchum. Not just a fellow baker, but a diabetic like myself, who realises not only how blood sugar spikes work, but lays out information in her cookbook with clear instructions on ingredients and their effects both in baking and in the human body.
Thorough, clear, beautifully illustrated, and loaded with sweet and savory recipes, an absolute staple for us low carb bakers. The recipes are tried & true, ranging from beginner skill to more advanced (like rolled cakes, or tiramisu). The savory recipes look amazing, and I cannot wait to make the mushroom tart. The bagels were incredible, as were the Swiss roll cupcakes, and many more.
Personal note: for the diabetics out there who may have lost much confidence and/or joy from diagnosis preventing traditional baking, please don’t skip Carolyn’s introduction... it was nearly tear jerking to be ‘understood’.
My husband gave me this book for Christmas. What a guy, haha. But I have to admit, we've both been loving it. We've been living the keto lifestyle for about 18 months and missed having a tasty sweet every once in a while. The book isn't only sweets, but those are what we're currently enjoying.
The recipes vary from simple to complex, and we haven't hit one yet that we haven't enjoyed. They aren't exactly low cal and though the carb counts are reasonable, you can't eat 12 brownies in a sitting. Well, you can, but probably shouldn't. A special shout-out to the ice cream recipe. We've had a hard time finding one that works, and this one does. And the zucchini crisp is heavenly. Highly recommended.
This is definitely the BEST Keto/Lowcarb recipe book I have read by far. Ms Ketchum goes above and beyond explaining the why’s and how’s of baking not only desserts but savory dishes as well. There are so many delicious recipes that I am still deciding which one to try first. Since changing to a modified Keto lifestyle a few years ago, I can say that it has been one of the best decisions in my life. (The Covid pandemic has made it difficult to find the right ingredients all the time of course…much like everything else.. hahahaha…So I am so happy to have found this amazing book to show you different suggestions). Desserts are something I do crave every so often, so this find is the best gift I have given myself in quite some time. 😉🤣
Everything I have made (and I’ve made a lot) from this book has been excellent. The tips are helpful and I appreciate the scientific approach to the recipes and understanding of why some things work or why other things don’t. I even made the Swiss merengue buttercream. The recipe is deceptively simple and thank goodness she had suggestions for what to do if it got a bit too cool or too warm (both happened!) and how to fix it. It turned out fantastic despite my attempt to blow it up. 😆 Ketchum is now my go-to for keto baking. I either start with this book or head to her blog. Highly recommend this for anyone looking to stay low carb for life and needing to find a way to make guilt free treats.
I love reading cookbooks and it is no secret I love Carolyn Ketchum’s cookbooks so that I’d love this book is no surprise. What makes this particular cookbook stand out for me is the incredible amount of detail the author provides about stocking your keto kitchen, cookware, how specialty ingredients behave, and even where to source some of them. Do not skip this introductory material even if you are experienced with low carb/sugar/gluten-free baking as you will likely learn something new.
When you dive into the recipes you will find lots of tempting possibilities; sweet and savory. She offers substitutions for dairy free alternatives wherever possible and just as importantly warns you ahead of time when you shouldn’t just swap out the sweetener you have on hand for a specific item in a recipe. Her recipes easy to follow and user friendly. And the pictures are gorgeous.
A word regarding purchasing specialty ingredients such as alternative flours and sweeteners? It’s been less than ten years since I first started aiming for low glycemic index eating and what a time to be alive! Many of these ingredients used to require exhaustive shopping but are now much more widely available. It’s still expensive to completely restock your baking pantry, and having moved cross country twice in the last 5 years I assure you restocking any pantry is expensive, but online shopping makes it comparatively simple to source the right ingredients.
I personally strongly encourage reading the recipe all the way through. We all know we should always do this anyway and seldom do so once we get a bit of kitchen experience under the belt but it is especially important with keto baking. Essential even. Type of bakeware and portion sizes etc really can make a difference if you want the best possible outcome and will help you avoid expensive disappointments. I baked some lovely little cream cheese cookies yesterday and forgot to flatten the first batch before popping them in the oven. They taste great and my family was beyond content but the last half dozen or so (the ones I hid for myself;-) that got that little flattening pat were even better texture wise, more delicate somehow.
If you are new to the concept of keto eating please do some research. Keto is not low calorie eating. If you do it right it is a sustainable and healthy way of eating and you will almost certainly lose some weight and find your blood levels improving but half measures do not achieve the same results. It has worked wonders for pre-diabetic me and my gluten intolerant autistic kiddo but requires real commitment. I am neither a physician or dietician so that’s personal anecdotal advice so please do your personal due diligence.
I will always count the day I discovered alldayidreamaboutfood.com as a lucky one and recommend following her blog as she posts new recipes often and graciously answers questions in the comments. If you have found yourself utterly discouraged about needing to eliminate sugar and/or grains from your diet I cannot emphasize how this goddess of the keto kitchen will change things up for you.
Baking Keto can be a challenge. This book helps you to use different products like coconut flour, almond flour, and coconut oil. Good recipes. Found it on Kindle unlimited and was so excited to find one where the author knows what she is talking about. I may just buy it since I want to keep it.
I’ve made and followed about a dozen recipes and they’ve all been winners. The latest was the ricotta cheesecake which was delicious. I can eat all my goodies and not worry about my blood sugars. This cookbook has been a great tool to manage my diabetes, loose weight and not feel deprived.
I am a gluten free home baker experimenting with keto options. I enjoyed the variety of recipes. I tried several of the recipes and found them easy to follow with many helpful hints. The finished products were very good and enjoyed by my family. I am excited to try more.
Loved the detailed comparison of all the sweeteners and which works best for crisping, browning, thickening, crystalline, etc. Tons of experimentation with almond flour! Great notes and detils for each recipe!
It's a bit disappointing that a book offered for sale world wide, only offers ounces and pounds, no grams or kilos, so I am constantly having to revert to a conversion chart, the recipes are great, but it's a pain to have to write in the book.
I actually refer to this Big Book of Ketogenic Baking as my Keto Baking Bible.
I have been on Keto since July 2018--for my husband and me, it isn't a diet, it is a lifestyle. I am always in search of new recipes and something I discovered early on--you can't beat a Carolyn Ketchum recipe for turning out great. The science and technics she shares in each of her recipes make the difference over anyone else's I've tried.
I will gladly admit that I own each of the cookbooks she published because I know that each recipe has been vetted, tried, and well-received. If I tell my husband I am going to try and new recipe and then say, "It is a Carolyn Ketchum recipe." His response is, "Well, then you know it is going to be good."
I have gifted this cookbook to others on Keto--because I honestly believe in it and the success of the recipes within the pages.
If you want to lose weight, but you have wicked love for sweet and tasty desserts and breads, this is the one book I would recommend--chocked full of yummy recipes sure to satisfy! Of course, even these delectable treats can't be enjoyed non-stop, but i have a small treat everyday, and I have lost almost 50 lbs on Keto.
What I love about this book is two-fold. It has wonderful directions, including the perfect utensils and pans to use, how to get the perfect measurements, and what ingredients will deliver the best results for any dish. And, as mentioned earlier - full od fabulous recipes. After trying several from internet posts, I decided I had to have this book in my collection. You can serve most of these yummy desserts to friends and family...if you're willing to share. I'll think about it!
I stumbled across this lady’s channel on YouTube. Best thing that ever happened! I was desperate for some treats and this book has provided some fantastic recipes i can’t wait to try. It’s very informative. The recipes are reasonably simple and they are the kinds of good ol’ treats we all love. Cakes, cookies and biscuits, scones, some truely scrumptious cakes, to mention only a few. I just need too round up some keto versions of the ingredients, then I’ll probably guts myself with a whole pan of Scottish shortbread!
Living the keto lifestyle is so much easier when you can have your favorite pre-keto treats without having to do kitchen science yourself. Carolyn Ketchum has done the hard part, I get to enjoy baking and eating ketofied treats. Check out her other keto cookbooks, website and YouTube channel. You won't be sorry.
Carolyn Ketchum is my Go To for all things Keto Baking. I trust her implicitly. And she delivers the goods... baked goods galore for those on a low-carb or keto diet.
If you aren't familiar with her, follow her on Instagram and check out her website www.alldayidreamabout food.com. You won't be sorry!
This is by far my favorite Keto dessert/baking cookbook. I checked it out twice from library and ended up buying my own copy. This is one cookbook in which I plan to actually try every recipe. Thank you Carolyn Ketchum for yet another great Keto cookbook!
