Bavarian Egg Dumplings - I'm from Bavaria and American bread, especially white putty bread, will not work in this recipe. Need Bavarian Farmer's Bread. Potato balls or dumplings are common for Bavaria, not egg or Swedish. The Norwegian is similar but too heavy on the flour compared to our potato balls and has meat, but looks good. Our other from scratch dumpling recipes used flour, not bread, similar to the Dutch Dumpling recipe and some like a pastry style dough cooked in the broth/soup/stew. Pierogies from Poland, of course, do not have cottage cheese but a variety of cheeses and other stuffings so be happy with your ingredients. These are usually made handpie size since one large or two medium will fill you up. Experiment with baking, pan saute - not heavy on the grease, as well as boiling.
Interesting batch of dumplings recipes. My favorite since I do not eat this type of food any more, the Jamaican fried biscuits, oops, dumplings. Proper Southern biscuits are food for soul. 4*
