The beginning of the year is often a good idea to start new things, like dieting after bingeing on cookies and chocolate! You have probably heard and read a lot about how bad carbs are for you, but you may dread the transition from these yummy cookies to the keto diet. However, keto doesn’t mean dull recipes. Essential Keto Bread: Sweet and Savory Baked Goods to Satisfy Any Craving could be exactly the book you need.
I requested Essential Keto Bread from the publisher because my spouse frequently follows the keto diet, and I thought it'd be nice for them to have access to baked goods sometimes. However, as soon as I got the cookbook, and showed it to them, they flipped through, read a few recipes, and said, nope, too complicated. Well....the publisher gave me a review copy, and I really prefer to review books to which I've been granted free access. So, I'm going to do my best, with the understanding that I consider the keto diet, under most normal circumstances, to be a lot of unhealthy nonsense. (Yes, I know. A totally unbiased review.)
Here's what I will say about the book. My spouse was correct. The recipes are extremely complicated, with long lists of ingredients and seemingly a lot of work involved in making them. The recipes also require a lot of uncommon (and presumably expensive) ingredients, items like erythritol-monkfruit blended sweetener, coconut flour, almond flour, psyllium husk powder, sugar-free chocolate chips, and xantham gum, among others. Also flax seed meal, which you're supposed to grind yourself in a coffee mill. This level of difficulty makes sense--keto baking is like a more restricted version of gluten free baking, which is onerous and complicated enough, in my opinion. And if you're on a keto diet seriously, especially for an extended period of time, and have time and energy to try these recipes, you might enjoy them.
I'm a bit skeptical even of how enjoyable the food would be, though. The recipes for pancakes were especially striking for me, in how peculiar they were, and unlike traditional pancakes. A recipe for 10 pancakes calls for 7 eggs, 8 oz cream cheese, 1/2 cup heavy whipping cream, and only 1/2 cup coconut flour. I'm not sure what they sound like, but not pancakes. or even crepes. Maybe they're delicious. But I'm skeptical. Especially once adding in sugar-free chocolate chips and monkfruit sweetener. (Also, that just sounds incredibly heavy and gross and heart-stoppingly greasy, but that is my personal opinion, and as previously mentioned, I do not like keto diets.)
So basically, I won't be making anything from this cookbook. Nor will my keto-loving spouse. Instead, I'm going to donate my copy to the library, so maybe the book can find people who will actually appreciate it. And maybe tomorrow I'll make some traditional pancakes for myself. However, I do appreciate that I received a review copy from the publisher, and this is my honest review.
While I am not on the keto diet myself, I have several friends and family who are. So whenever a keto cookbook comes to my attention, I check it out. This cookbook pleasantly surprised me. Most of the keto books I’ve seen lately have been disorganized and poorly put together with questionable recipes. They also lack essential descriptions and explanations for the novice keto baker. I'm happy to say that this book has none of these problems. The cookbook has a lengthy introductory section that covers many aspects of keto baking, including essential ingredients, tips, and troubleshooting. The book is also well laid out, starting with breakfast goods, moving on to sandwich and other breads, followed by specialty breads, and ending with dessert. I love a cookbook that is well organized so if you know what you want, you can easily find it. The pictures in the book did look intriguing, though they didn't look precisely like the standard flour baking recipes. I would imagine there would be textural and structural differences between traditional recipes and their keto counterparts. But if you're wanting to recapture the flavors of favorites, I would imagine that this book would be helpful. A few things struck me as odd here and there. For instance, the pecan sandie recipe was done as a bar cookie rather than a preformed or drop cookie. Also, the ingredient list for that recipe said that the pecans were optional! Then it wouldn’t be a pecan sandie recipe! That said, I think that those who are missing some of their previous carbohydrate-laden treats well enjoy the options that this book offers.
This was an interesting cookbook. I liked the tips and tricks in the beginning which went over some common pitfalls to keto baking (i.e. crumbling). I learned about some new binding agents, and there are a lot of recipes in this book. To improve this book, I would have added more pictures so you know what the final product should look like.

n interesting book for those on the KETO diet for with gluten allergies as it discusses nut and other non gluten flours. There are pancakes, waffles, breakfast breads, flat breads, hamburger rolls, sandwich breads, pizza, tortillas, cornbread, soft pretzels, bar cookies and desserts.
