One of the best bread books I've found--made so many recipes out of this one, and all of them have turned out amazing!

All three of these stars go to the idea behind the book. Recipes and short bios on Home Bakers. Would love to see a modern one done cause this one is a lil outdated.

They're just...People, just friends of the author and...People,
3rd place ribbon winners from the Minnesota State Fair from 2 decades ago,
Mormon housewives, the author's own wife.
Pride & love, pride & love & the ritual of Bread.

YET! A BIBLE.
for beginners, not the raging bread-snob you may become
after a number of victories from this book.

The entire bread process, the description, the explainations
--- all indispensable, though romanticized.
Many recipes are redundant, different folks' versions,
but there are some serious winners--
traditional recipes from many cultures--
And then the sourdough department--
the stewardess long-sponge w/ honey,
the sourdough rye w/ molasses--
these are gonna stay in my repertoire FOREVER.

Note: Emphasis on entirely whole-wheat flour seems dated if not misguided?
Whole wheat flour has very low gluten content, which isn't very exciting for the yeast. I'm going to say-- the whole wheat needs to be at LEAST half
bread flour (white King Arthur, or whole wheat BREAD flour)
to keep up a good rise, a good hearth-y texture.
