YET! A BIBLE. for beginners, not the raging bread-snob you may become after a number of victories from this book.
The entire bread process, the description, the explainations --- all indispensable, though romanticized. Many recipes are redundant, different folks' versions, but there are some serious winners-- traditional recipes from many cultures-- And then the sourdough department-- the stewardess long-sponge w/ honey, the sourdough rye w/ molasses-- these are gonna stay in my repertoire FOREVER.
Note: Emphasis on entirely whole-wheat flour seems dated if not misguided? Whole wheat flour has very low gluten content, which isn't very exciting for the yeast. I'm going to say-- the whole wheat needs to be at LEAST half bread flour (white King Arthur, or whole wheat BREAD flour) to keep up a good rise, a good hearth-y texture.
