I loved both Morning Bowl with Eggs, Avocado, and Tomatoes and Morning Bowl with Strawberries, Avocado, and Cottage Cheese so much that I eat them almost everyday.
On 1/26/2021, I made the Asparagus lunch and it was delicious! I didn't make the sauce but it's really good on its own too. I substituted shrimp for lobster tails and made two servings. I ate the same for dinner. I can see myself eating this dish a lot in the future. It's that good! The recipe was easy to follow and quick to make, both met my busy schedule standards!
Honestly, I do get hungry after eating this meal, so I eat twice as much every time I made it and I have eaten 3-5 times already!
One day, I made Kale & Cheese Omelet for brunch and loved it. My version doesn't look exactly like the cookbook because I sliced the shallots instead of finely diced it. I also put more fresh kale because I need all the extra vitamins kale has. I also substituted cheese because I didn't have gouda cheese on hand. It's still delicious.
I started reading in detailed the advices the author gave in the first 47 pages of the book. It's definitely helpful. One advice was to eat slowly so we don't ended up overeating. Another was how consuming fibers keeps us feeling full longer. I didn't know that the side effects of antibiotics is gaining weight. Now I understand why Italian restaurants served olive oil with their bread as snacks while we wait for our meals. The good oil breaks down the carbs slowly and protect us from elevated blood sugar thus helping to prevent diabetes. I like learning which foods has good sources of protein and I appreciate that the author listed them out. I also like learning which vegetables is good for vision and it's not the usual carrot I'm accustomed to hearing. The definition of triglycerides was helpful because I just got my lab results back and I'm understanding it more. Today, 2/18/21, I'm having a Kale Smoothie with Avocado, Cucumber & Coconut for brunch at 10:30am. It's surprisingly delicious. I haven't had a green drink in 2 years!
The breakdown of the phases and what to do daily was helpful. I like the glimpse into the author's lunch at work. I like the pages of keeping on track! Very helpful advice. As I read "How to Make a Successful Start," I see myself having to restart the whole process over again. Strict with results so I'm inclined to restart the Keto High Fiber Diet. I highly recommend everyone this cookbook to keeping yourself healthy or start changing your eating habits.
I didn't know much about keto when I won this book, but I entered because I love cookbooks and figured I could find something good to make, diet or no.
The intro information is interesting. The book is pretty, there are color photos of each recipe which I love, and the recipes are well laid out. No recipe takes more than a page, which is generally my preference since you don't have to flip back and forth.
Unfortunately, and I think this is the fault of the diet and not the book, I don't think there's anything I would make in it. Most recipes had add ins that I don't have on had and have no intention of tracking down to try them, like inulin or potato fiber. I'm also not a big fan of avocado.
People who are on the keto diet should check this out - it just wasn't for me.
I am truly interested in the Keto diet. The beginning of this book gives you a whole view of the diet. It explains what it is and the different levels to do the diet.
The pictures in the book are absolutely beautiful! They make the food look delicious.
I love that the recipes seem to be pretty simple, by not including 100s of ingredients. A lot of the recipes are totally doable and easy for at home simple cooks like myself. I would find substitutes for some of the ingredients like potato fibers and flaxseeds meal. Some of those things are just not what I have in my basic pantry.
My favorite recipes I will be trying are the Radish Noodles all’s Carbonara (but substituting for hearts of palm or zucchini spaghetti), the Shrimp with Asparagus (no flaxseed meal), Salmon Fillet on Creamy Kale (will try with spinach too), Cauliflower with Parmesan, Asparagus and Avocado Salad, Ham Salad with Gherkins, Tomato Avocado and Mozzarella, Cucumber Blueberries and Coconut Milk Smoothie, the Morning Bowl with Egg Tomato and Avocado (minus the sambal oelek) and Cauliflower in Fast Bolognese (minus potato fibers and sambal oelek and adding in meat).

As a 2 year keto diet person I was delighted to win Dr. Kurscheid book. I had started to have more days with higher carbs and started to put back some pounds. I needed to read once again all the wonderful benefits to this diet. Book is easy to understand, doesn't bogged you down with too much information and could change your life as you loose body fat and weight. I was however disappointed in the recipes. I was hoping for more common keto things like chaffles, cloud bread etc... but did find a few that I will be trying.

I entered the giveaway because I am interested in learning more about the Keto diet. I’ve put on some weight recently and want to make some lifestyle changes rather than just diet for awhile, as that always seems to lead to me gaining the weight right back.
These recipes look delicious. Some might be over my ability though (I am not a very experienced chef though…I tend to choose very simple recipes).
I don’t have any plans to make any of these recipes any time soon. I am a mother to 3 young children and I honestly don’t see 2/3 of them being willing to try these dishes. I do plan on holding on to the cookbook though for a time in the future when we can be a little more adventurous with our eating.
This book sounded good and honestly who doesn't love recipes? I do love the fact that it shows pictures for all the recipes, that is a big plus. That is probably what bumped it to 4 stars. The recipes themselves, in my own opinion of course, are less than desired. I did like some of the soup recipes and cant wait to try those and the Cauliflower with a Parmesan almond crust. Basically about 8 of the 69 recipes I actually want to try. I think if it had actual recipe ingredients people kept in their cabinets and and not stuff they have to go out and search for, the recipes would also be more appealing.
The author provides a helpful introduction in the first part of the book, followed by beautifully photographed recipes. Many of the recipes look like something I will try such as the Morning Bowls, Chicken Broccoli Curry, Cauliflower with a Parmesan Almond Crust, etc. There are a number of recipes that contain ingredients which are key to increasing fiber that I don't currently use or have on hand. Thank you goodreads for this giveaway so that I could have a chance to learn more about how to eat on a keto diet while also increasing my fiber intake.
Great info, well written. All the recipes I've tried have been delicious. Lots of photos to inspire and show you where a recipe is headed, which is always super helpful.
