3.5 really. Jaega clearly knows what she’s talking about and is mostly engaging and inspiring (I’m a very beginner and other books have shown themselves too technical), so I can’t wait to try some of her recipes. The main issues are the wrong references within the text (page numbers that don’t match), some stumbling upon microorganisms, and the list of places where to drink on the back. A serious book on wild beers cannot omit the Cantillon brewery bar (which admittedly has a lousy atmosphere but incredible selection) and the 3 Fonteinen Lambic-o-droom in Beersel. By the same token, mentioning Mikkeller as a place where to drink in Copenhagen (long time resident of the area) in 2022 is completely out of time, as they have been irrelevant for years. Baghaven keeps a somewhat interesting offering, but Mikkeller as a company is a thing of the past (both from a beer perspective and from their corporate image). It’s basically like recommending Brewdog. End of rant. Good book otherwise!
