I've enjoyed my Instant Pot for the past two years but was aware that the recipes I used it for seemed meat-centric and heavy on creams, sauces and gravies. We've been trying to eat healthy meals with more vegetables and less meat after a couple of health scares so when I spotted this new cookbook using the Instant Pot to make healthy Mediterranean meals, it seemed just what the doctor ordered.

300 recipes provided--that should keep me busy! The chapters are titled: Breakfast; Dips and Appetizers; Rice; Grains; Pasta; Beans; Lentils; Vegetables; Seafood; Fish; Poultry; Pork, Lamb, and Beef; Fruits and Desserts. I've already highlighted several to try, mainly belly-warming soup recipes at the moment since we've just had a 3-inch snowfall overnight: Avgolemono (Lemon chicken soup), Hearty Minestrone Soup, Mediterranean Seafood Chowder, Mixed Seafood Soup, and Cioppino all sound particularly yummy!

I will update my review as I do some taste-testing of dishes. I do wish there were more color photos included--those are always inspiring to answer, What's for dinner?

I received an arc of this new cookbook from the publisher via NetGalley in exchange for an honest review. Many thanks for the opportunity!

I received an advanced reader copy of this book in exchange for an honest review via netgalley and the publishers.

This book is crammed full of tantalising dishes that will definitely get your taste buds dancing!
The hardest part of this book is the prep, but once youve gotten that down pat the rest is pretty straight forward and breezy.
There are so many dishes in this book I just dont know what to try first. Definitely a book to have in your collection!

Thank you netgalley and publisher for the book to review. I liked the book but I wish there was more pictures and some of the pictures that were taken weren’t that appealing. The introduction was very informative about the Mediterranean food pyramid. I didn’t realize that meat is the least focused on in a meal. Mediterranean diet is more focused on legumes grains, and seafood which I found interesting. This book is great for beginner instant potters. Very informative on how to use your instant pot. As a person that uses my instant pot for certain things like rice and soups this would widen my verizon to other recipes using the instant pot.

I’ve really enjoyed reading the recipes in this book as it served two purposes in my life. The first being that my family received an instant pot for Christmas and the second is that I’ve been interested in a Mediterranean diet for some time. Admittedly, there are some dishes that I won’t try but there is plenty that I will definitely be digging into.

Thank you Netgalley for an ARC in exchange for my honest opinion.

Originally published on my blog: Nonstop Reader.

The Everything Mediterranean Instant Pot® Cookbook by Kelly Jaggers is a cookbook and recipe collection slanted toward the Mediterranean Diet and utilizing the instant pot electric pressure cooker for preparation and time-saving. Due out 11th Feb 2020 from Simon & Schuster on their Adams Media imprint, it's 304 pages and will be available in paperback and ebook formats. According to the publishing info, some of the content is compiled from earlier Adams "Everything" series publications.

The layout is logical and easy to follow. The introduction covers the basics of the Mediterranean Diet, tools, supplies, how-to for the Instant Pot, and cleaning and maintenance. The following chapters include the recipes arranged roughly by category: breakfast, dips & appetizers, rice, grains, pasta, beans, lentils, vegetables, seafood, fish, poultry, pork/lamb/beef, and fruits and desserts.

Ingredient measurements are supplied in American measurements only. There's a conversion chart for metric measures in the appendices. The nutritional information: fat, carbs, protein content are listed for the recipes as well as serving sizes. Extra tips or recipe alternatives are listed in sidebars with the recipes. The recipes themselves are fairly straightforward and are made with easily sourced ingredients. Many are very simple, none of them are overly complex.

The photography is not abundant; most of the recipes are not illustrated, but the photographs which are included are clear and well done. I wish there had been more photographs and serving suggestions, but I do understand that extra photography increases the price of book projects very quickly.

This is a huge collection of recipes and even allowing for the fact that some of them are very similar to others in the same category, this will keep Instant Pot cooks going for ages. Many of these can also easily be adapted to non-Instant-Pot cooking with the codicil that food handling safety and prep be taken into account.

Four stars.

Disclosure: I received an ARC at no cost from the author/publisher for review purposes

I chose to read this book as I live on the Mediterranean coast, and despite not having the actual Instant Pot multi-cooker with which this book is associated, the recipes were too tempting to resist!

Having moved here almost two decades ago, I found (happily) that there were very few fast foods places to eat, and local dishes were readily available, using fresh, healthy ingredients. Times have changed, and the burger restaurants have infiltrated the region, but not at the expense of local, family eateries offering proper food with typical Mediterranean panache.

Admittedly, at home, my go-to dishes stem back to food I ate back in the UK; you cannot deny the power of nostalgia. Eating out, however, is a different story, and I will choose a local, traditional Mediterranean dish over junk food any day.

I am glad to say I found plenty of inspiration in this book to expand my own repertoire and boost my diet with the Mediterranean vibe - lots of fish, olive oil, vegetables and herbs. Some of my favourites, and ones that I'm dying to try myself are:

Tomato & Asparagus Frittata

Baba Ghanoush (aubergine dip)

Skordalia (garlic dip)

Basil Cod Kebabs

Rosemary Salmon

Lemony Chicken Soup

Risotto Primavera

I could go on, there's so many to choose from!

Is your mouth watering? And none of these are difficult ...

Easy to find ingredients. Simple to make. Tasty and healthy!

There's a recipe for dandelion greens that caught my eye, but having dogs, I know that the dandelions are "watered" way too frequently for me to ever be tempted to eat them!

The book is obviously intended for the US market, so terminology is occasionally "iffy" - I mean, what on earth is a SLIDER?, but in general the recipes are easy to follow and well laid out. The only downside is reading this on a Kindle doesn't lend itself to easy navigation. My copy is an uncorrected proof, and there's no links on the TOC, so that makes  for a lot of scrolling through (I've bookmarked my favourites ;) hopefully that'll work) That said, the final version will no doubt include that option, although I think a print copy would be well worth the cost, if just for the scrummy pictures.

I received an e-copy of this book from NetGalley and have reviewed voluntarily ... in between feasting ;)

I am excited to see the final version of this book. The recipes look terrific and the presentation and descriptions were mouth-watering. I am not sure what to try first. So many dishes looked tempting and I am certainly excited to give the Instant Pot a try for these meals. I have read through several Mediterranean Cookbooks, some of which were for the Instant Pot, but this one deserves high praise.
There are several things that it does well for me as a lover of cookbooks in general.
1) Recipes! Wide variety with easy to follow instructions (including conversions for wherever in the world you are) and good pairings to make a complete meal.
2) Wide variety of selections with everything from breakfast ideas, oatmeal ideas and frittata that doesn't need micromanaging to appetizers that I often eat as a smaller meal, like varieties of make-at-home hummus and others. Then full meals and sides, such as chicken, rice, soups, pasta, meats and vegetarian options. There are desserts as well. Many of these were appealing and appetizing. I started to get bogged down in perusing this cookbook because my handwritten grocery list was consuming my time!
3) The aside commentary was a terrific addition. This included "tips" like "recipe versatility" suggestions or substitution tips and then how to properly cook the recipe with the sub. So, for instance, if subbing certain tougher, longer cooking veggies, the tip to dice into smaller sizes compared with the quicker cooking veggies in the recipe is very helpful to a home cook like myself. Another great tip was the "Quick Soaked Beans" to get your dried beans (way cheaper) ready for use faster than an overnight soak.
4) The history of various recipes or ingredients used certain recipes and either how it became associated or known as Mediterranean or pointing out if it actually originated elsewhere.I love this in a great cookbook. It really adds to the joy of going through one. You get a sense for the time, the culture and the atmosphere, as well as why the ingredients are what they are.
5) The photography. The photos appeared to be really well done and are always a huge part of a successful cookbook. I think the final version will be the best test of this aspect though.
Thank you for the early copy for review. Highly recommend.

Up until I purchased my first Instant Pot, my experience with pressure cooking was confined to canning fruits and vegetables. My daughters were enjoying a whole new approach to feeding their families with the Instant Pot. We got to experience that excitement while our kitchen was being remodeled and they each treated us to home cooked dinners. It was amazing to see how this amazing appliance became an integral part of their kitchens. Needless to say, we purchased an Instant Pot too.

The Everything Mediterranean Instant Pot Cookbook by Kelly Jaggers is chock full of recipes that will please anyone who is striving to live the Mediterranean way, employing this game changing appliance. The recipes we have cooked using this cookbook have been easy to put together quickly, and resulted in tasty meals we're planning to fix again. Our favorites so far include Stuffed Acorn Squash, Almond Date Oatmeal, Creamy Thyme Polenta and Chicken Breasts stuffed with Feta and Spinach.

I am impressed with this cookbook. Like most cooks who are learning to cook with a a new appliance I was searching online for recipes and tips to make the most of my Instant Pot. This cookbook is good for beginners as it includes very good how-to information to start cooking right away. Within a few months of getting our 6 quart pot I ordered a 3 quart (mini) Instant Pot. I have used both pot sizes in preparing the recipes, sometimes simultaneously. This is a book I will use again and again because I like it that much.

I received an advance copy of this cookbook for review from Netgalley.com.

This book combines two of my favorite things in the kitchen - Mediterranean-style cooking and the Instant Pot. And she gets right to it, spending only about a dozen pages explaining what the Mediterranean diet is and how to use your Instant Pot in the first chapter.

The recipes themselves are mostly grouped by the main ingredient, except for the chapters on breakfast, dips/appetizers, and desserts. Most recipes don't include a photo, which makes sense given the number of recipes crammed into a 300-page book, but they do include enough nutrition information to make evaluating your options easier. There's also no prep or overall cooking times provided, and it's not a simple matter of just adding up the times listed in the instructions (doesn't include the time to come to pressure or release that pressure).

On the other hand, the variety of recipes is outstanding, and they are all fairly simple recipes. Some have extensive ingredient lists, but the recipe is otherwise simple, and the vast majority of the ingredients should be relatively easy to find even without access to specialty markets. I would have to go to the next town for a couple of them, but the list is remarkably short for number and variety of recipes here.

This one earns a spot on my shelf.

I am struggling with this book as I want to like it so much but I am finding it very hard to navigate digitally and thus use. I've just bought an Instant Pot which I love and am using it daily. I've been following the Mediterranean Diet for years so when I saw this book I was very excited.

It has lovely photos and a lot of recipes but is almost impossible to use on my Kindle. I've tried using my iPad but that is not working well either. The formatting is better but I cannot get to the recipe I want.

I've just downloaded it to my desktop computer and can now see the text and recipes better but navigating to a recipe I is tedious. There is an index at the back but no link to the recipe. The only way is to find the 'Go To Page' function in the Adobe Digital Editions software. There is a table of contents before each section but finding the section start means scrolling through the whole book until you find it.

Disappointing.but I think the printed copy will be lovely and a great book! I think all recipes books are challenging in digital format, especially on a Kindle.

With thanks to NetGalley and Adams Media for a free copy of this book in exchange for an honest review.

I'm holding off on reviewing this too much, because reading it on my Kindle was a pain even for a seasoned pro like me (hopefully this is just an ARC error and not a full on ebook layout) and I ended up looking at just a few recipes and flipping through it.

My main take-aways:

✔: I will definitely try several of these recipes.

✔: A huge number of recipes! A big portion were the same ones you see everywhere but I spotted some new ones, too.

✔: Good instructions with nutrition facts.

✘/±s: I knew this was coming, because it's my constant complaint and it's a huge problem with the Everything series, but... where were the pictures, sob. (But they have improved a little?)

✘: Why so many freaking soups. (Also a frequent complaint I have with Instant Pot cookbook cookbooks.)

tl;dr: It's an easy purchase for my public library collection. I'll definitely put a hold on on the physical book when it arrives and try it out.

One of my resolutions this year is to make more use of my Instant Pot. Combine that with recipes aligned with the #1 diet for a healthy life, and you have a cookbook of high interest to me. Before the recipes begin, the author gives a nice overview on the Mediterranean diet basics as well as a great primer on the Instant Pot functions. The recipes are preceded with a description of the dish, background of the recipe and/or ingredients and what you may want to serve it aside. Recipes are mostly plant based. There are entire sections dedicated to meat, poultry, etc., however, veggies and whole grains are the stars here, too. If you have a sweet tooth, there is a section for desserts, boasting whole grains and fruit. Chocolate rice pudding is high on my list to try! Thank you to Netgalley and the publisher for this ARC in exchange for an honest review.

5/5 stars.
THE EVERYTHING MEDITERRANEAN INSTANT POT COOKBOOK by Kelly Jaggers begins with an explanation of the Mediterranean diet and a guide to cooking in an Instant Pot. It contains 300 recipes for healthy meals that can be prepared in your Instant Pot. The chapters include recipes for breakfast, dips/appetizers, rice, grains, pasta, beans, lentils, vegetables, seafood, poultry, pork/lamb/beef, and fruits/desserts. Each recipe gives nutritional information broken down by serving. The instructions are clear and straightforward, so that even someone new to IP cooking can be successful.

I am enjoying this book because it combines my love of IP cooking with recipes that fit the Mediterranean diet. I'm not on a diet, but enjoy healthy eating and the tastes of the Mediterranean. If you enjoy the same things, give this cookbook a try.

Good recipes. But, the set up on Kindle is trash.

The recipes I have made using this book have been good. The Classic Hummus, Creamy White Bean Soup and Black Eyed Peas with Olive Oil & Herbs have all had great flavor. They underestimate the amount of time to cook beans (add at least 50% more time or soak beans, even though the recipe says you don't need to).

But, the Kindle interface for this book is awful and makes the book too difficult to use. It really doesn't take that much effort to add a single, complete, clickable directory of recipes. Or, at least provide a programmed table of contents. But, nope. You have to click through hundreds of screens to get to the "section" you want to look at recipes in. You can't even search for a recipe name or ingredient, it just says "indexing..." forever and never comes up with results.

Formatting for the eARC make this a little difficult to follow recipes, so I didn't make any. That being said, I liked that it had some colored pictures even in eformat. I looks like it will also be giving the nutritional values of the recipes (fat/protein etc.). I also liked how the chapters were broken down - breakfast/dips/rice/grains
/pasta/beans/lentils/vegetables/seafood/fish/poultry/pork, lamb, beef/fruits & desserts. Also, the ingredients seemed to be ones that would be easily bought. This will be one I recommend for the library and will also probably be the one that I buy for myself.

Thank you the the publisher and NetGalley for my eARC in exchange for an honest review.

I have obviously not tried all the recipes because who has time for that! They are also not all to my taste, but the ones I tried were yummylicious!
The Lemon and Garlic Rice Pilaf was so good. I had it with grilled fish.
I also like some of the additional info eg about the Pasta Primavera. Who would have thought this dish originated in the US and Canada. It sounds so Italian!
The Heirloom Tomato Basil Soup was also really good and I loved the Burgundy Mushrooms. I will be making this a lot.

This book has a lot of great ideas and starting points. I've tried a couple recipes and they turned out well (but not great - which is why it's a 4 star). I really like the flavors of the dishes but there are definitely things that were added to some that had no value that I could see and I'll make the recipe again and just omit (ex. the "easy pesto chicken and potatoes" was great flavor wise and the potatoes were so tender, but the onions were mush)

I have been wanting to try a Mediterranean diet but needed some recipes. This book was perfect for me. It had so many recipes to choose from.

The book starts with an explanation of the Mediterranean diet. It provides a food pyramid which even includes red wine. In moderation, of course.

All of the recipes are fast and easy since they are instant pot. I highly recommend this cookbook.

This is definitely one of the best cookbooks I have read for the Instant Pot! I want to try so many recipes in this book and as a vegetarian it is nice to come across a cookbook that isn't just ingredient substitutions to make them vegetarian but the dishes that are made the way they are meant to be made!

I found this cookbook full of interesting sounding recipes, which I would like to try. Some recipes sounded very simple, some very complex. My initial reaction was "I need a herb garden in order to make most of these recipes" . The author does mention that you can substitute dry herbs and that if you do, reduce the amount since dry herbs are more powerful than fresh. There are thorough step-by-step directions and good conversation charts. I believe this to be a good resource.

The book has interesting recipes. There are a few that are not purely one hundred percent Mediterranean, but all in all the book has good recipes. They are tasty and interesting.
The critique I have is that Since there are multiple instant pots on the market there should be more modifications for the differences even within the Instant Pot Brands models.

Such a great variety of recipes for my new Instant Pot, and I’m always looking to add more Mediterranean recipes to my collection. I’m really impressed with the lentil recipe options as well as the variety of soups. I’m going to try the pesto chicken and potatoes recipe next week so I’ll report back with an update.

First the recipes were easy to follow.Second I was late and nervous to the Instapot movement. I remember my mom having a pressure cooker and remember whistling tops and tense moments in the kitchen. The step by step guide was so helpful and the outlines for each recipe were well thought out. I found the writing simple but not condescending. Great fun really!

The recipes sound delicious. There’s a lot of recipes that require you to press cancel during the cooking process to do something else. I guess mentally I was expecting more of a crockpot cookbook where you put everything in and let it go until it’s done. Also, I am a visual person so I would have liked to see more pictures of the recipes.
