The material in the book(s) if fabulous. I knocked off a star because this is only book 1. I jumped the gun on how I evaluated the recipes initially. Looking at them and the way they're presented is different from how I've normally experienced cookbooks. I'm learning new things and the information is presented in a friendly accessible manner to the every day person. Sometimes authors in this subject matter have a more difficult time conveying the complexity of the theory in every day terms. The information can become cryptic and ppl end up either giving up on understanding or applying misunderstood theory which can be dangerous. If I was going to recommend a book on this topic manner at this time - this would be the one.
