Where can you show up for world-class barbecue, stick around for the blues, and shut the place down waxing poetic with some pretty colorful characters? At the Dinosaur Bar-B-Que, of course, the Syracuse-based honky-tonk rib joint known far and wide by bikers, blues musicians, and barbecue aficionados. This first-ever barbecue restaurant cookbook features more than 100 flavor-packed recipes, from starters through desserts, guaranteed to get your motor running.

Grab that way-too-clean apron off its hook and get ready to flip, slop, slather, and slide your way to barbecue heaven. After all, it ain’t barbecue ’til you get some on you!
If you live in the Syracuse New York area, you KNOW where to go to get fabulous barbeque with world-class blues playing in the background. It's at the Dinosaur Bar-B-Que and this book not only gives you the creation of the Dinosaur (bikers need good food at their gatherings too), the construction of the smokers, the in person research into spices, how to smoke properly, tons of grilling tips and the recipes. Yum.
There are also lots of pictures, some tattoo art and bathroom quotes - writing on the bathroom walls is encouraged and regularly needs a paint job to get a new surface to fill, lots of tips on low and slow cooking, grilling, setting up a chimney of hot coals and a second one in order to keep the fire at the right temperatures, sources they use - all so the reader can set up their own grill or pit at home. And the recipes. From the lists of ingredients; to setting up the grill, pan, or oven; mixing, making, mopping, flipping and tossing on the fire to cook slow and succulent.
John Stage has spread his tasty, juicy ribs and more beyond Syracuse into Rochester and the Harlem area of New York City at the publication of this book. Buffalo, Newark, Brooklyn, Troy and Stanford, Ct have joined in. Seriously, you get the chance to stop in for a meal, you would not regret it. (and you can order 'takeout' for delivery anywhere in the continental US.)
Hmm, maybe there needs to be a lunch stop soon for a BBS - brisket, bacon and swiss sandwich....with a side of honey hush cornbread. . . .
We use this to cook for "company" and it always becomes a conversation starter! We have tried (and loved!) the Mutha Sauce (aka Dino's jarred BBQ sauce), the guacamole (threw out all our other recipes), the asparagus/red pepper/potato salad, the honey hush corn bread, the cranberry/apple crisp... and loved them all! Now if we can only rig up an outdoor smoker/grill...
I bought it when it came out because I live in Syracuse. Gotta support the local business's. I've had great success with all of the recipes so far. Gave a copy to my brother for Christmas and he became the BBQ master. Pretty much the gift that keeps on giving. It's a great primer on rubs, sauce, and basic technique. As well as all their tasty side dishes.
Nothing beats being at the Dinosaur, but this is a good fix for when you can't get there. The recipes are authentic, the food is great. We regularly use the rubs at home.

This is my standby (and favorite) cookbook. I use it whenever I want to make something special for Mare (Miss C claims my cooking is too spicy). Last trip to the ADK we used it for every meal.
The restaurant has always been a great place to eat, and this recipe book is a wonderful way to try to recreate dishes at home. The spice rub is fantastic.
