This guy is crazy like a fox. I recently bought an Instant Pot, and I'm an experienced cook, very familiar with slow cookers and stove top pressure cookers. I wanted some examples of what makes this appliance different. The booklet that came with it is dry and really short on information, but David Murphy is imaginative and practical. I wouldn't have thought of using the yogurt cycle to proof bread dough, or to ferment sauerkraut, but he shows us how. Make beer using the pressure cooker function? Sure. Marmalade? Kimchee? He has it covered. Clear sensible advice and very creative thinking. (If you just want to make a pot roast or stew, try another book, though.)

A disappointment

I don’t think I would eat any of these dishes. For the couple that I might, I would cook them differently.
