Disclaimer: I had never spiralized before I received this book and still have never spiralized since I've read the book but I do plan to spiralize in the future. Happily for me, the book said I didn't need to spiralize...ha ha My husband and I are still in the process of moving from one place to the next and I'm not buying appliances, big or little, until the move is completed. But the natural food store I frequent, at the new area, has all kinds of pre spiralized products. Also, I just chop some things up and tried recipes with what I chopped. Creativity is my speciality right now.

There are recipes in this book for everything under the sun, as long as it's vegan. There are even baked goods with spiralized fruit, drinks, casseroles, main dishes, side dishes, and my favorite, desserts! I went for my favorite foods and will be venturing out into more of the tofu recipes, in the future. In my case, I leave out the salt and sugar, because I just don't use those things, but still enjoyed the recipes I made.

This book is an inspiration! Two years ago I was gifted a spiralizer attachment for my kitchen aide mixer. Until this book it languished in the box all dusty and ignored. This book lit a fire under me to try new and varied things and take control of my kitchen accessories and spiralize to my heart's content.

I'm one of those people who has all the latest kitchen gadgets - air fryer, pressure cooker, crock pot, high speed blender, Instant Pot, food processor, hand blender, coffee grinder...you name it. More often than not, they end up gathering dust at the back of some cabinet because it's just easier to use a plain old pot or pan. While I do break out my spiralizer occasionally, it's mostly just to make standard issue "zoodles" (spiral cut zucchini) or, if I'm feeling adventurous, maybe some carrots or sweet potatoes. Honestly, once I bought it, I never really knew what else to use it for.

That's where Barb Musick's excellent Vegan Spiralizer cookbook comes in. It's filled with great plant-based recipes and gives me a good excuse to re-visit that spiralizer. While I'll admit there's an element of gimmickry to spiralizing fruits and vegetables (since for most of the recipes you can probably just grate or julienne instead), these are still flavorful, yummy and very approachable meals that anyone can enjoy. I've already tried (and loved) the Quinoa Veggie Bowl with Garlicky Lemon Cream Sauce (p. 38 - don't skip the amazing and super easy sauce), Cold Zoodle Salad with Avocado (p. 99), Green Chile Hash Browns (p. 25) and Balsamic Roasted Carrots (p. 64). The recipes are pretty basic (even though some involve a number of steps) and call for ingredients that are readily available.

I haven't braved anything with beets yet (too messy) but hope to try the Tropical Plantain Bowl (p. 39) soon. While there is some filler (do we really need to make a bed of spiralized celery and sweet potatoes to put under our Buffalo Cauliflower?), for the most part all the recipes seem super accessible, healthy and delicious.

"The Vegan Spiralizer Cookbook" is a vegan cookbook that uses a spiralizer to chop the vegetables and fruits in a visually interesting way rather than shredding or otherwise cutting them into pieces. She started by talking about how to buy and use a spiralizer and what vegetables and fruits work well with it. She used a lot of tofu in the recipes and would also use things like vegan cheese, vegan sausage, vegan butter, etc. Most of these recipes were made with ingredients that should be easy to find. The meal recipes usually served 4 to 6 people. Some recipes took under 20 minutes while others took over an hour.

She had 15 recipes for breakfast, 10 recipes for "bowls," 10 recipes for sides, 10 recipes for sandwichs, wraps, and burgers, 11 recipes for soups and salads, 20 recipes for main meals, 15 recipes for desserts, 5 recipes for drinks with a spiral of fruit or vegetable, and 5 recipes for sauces. Each recipe included preparation and cooking time and contained the nutritional information of calories, fat, carbs, fiber, sugar, protein, and sodium. She also indicated if a recipe was gluten-, soy-, or nut-free. There was a picture of one recipe in each section. While I usually don't mind if there is a lack of pictures, I think I would've liked more pictures this time since the point was how the spirals added visual interest.

I think this is a great cookbook (and not just because I'm the one who wrote it) - let me share my reasons. Most of us want to include more fresh fruits and veggies in our meals because we know its a healthy choice for our bodies. We know this, but I'll be the first to admit that salads and steamed veggies can get boring.

My goal with this book was to help readers get more fruits and veg on their plates while still enjoying their favorite dishes, which is why I've come up with interesting and easy ways to add them to familiar recipes. Veggie Noodle Soup (the veggies ARE the noodles!) and a Barbecue Tofu Bowl where sweet potato noodles replace the rice, and super-rich Potatoes au Gratin where the potatoes are spiralized instead of sliced are all healthy and easy and fun ways to change up the recipes we're used.

Anyway, that's my $.02, I hope you enjoy the recipes!

With 101 vegan recipes, the Vegan Spiralizer Cookbook has something for everyone. From breakfast to dessert, all types of recipes are included.

Each recipe has nutritional information. All of the recipes are vegan and labeled when gluten-free, nut-free or soy-free. They are also labeled with a cryptic “under 20”, which isn’t explained in the text and I couldn’t find a diet named that online. It’s also not the number of ingredients. Hmm...

Overall, I like the recipes in the Vegan Spiralizer Cookbook. I just wish I could have seen them too. Having only one picture per chapter is an unforgivable sin for a cookbook. So for that reason, 3 stars.

As this is a food preparation book, I do not plan to finish it, as I would a novel. The information is relevant to learning how to benefit from a spiralizer, the recipes are easy to follow.

What a fun book to have if you have any of the spiralizing tools for veggies! The recipes are good and it also gives you ideas to try something different with other vegetables.

It would have been nice to have more photos in this book, although that has nothing to do with the author and her recipes. They are very good.
