To create the first humans, the gods breathed life into two corncobs. This story reveals how vital corn was to the Mayas, as well as to the Aztecs and other native peoples. The native influence in Mexican cuisine is clearly seen in the thousands of variations on basic corn tortillas, beans, and chili peppers. The Spanish inheritance is shown in the numerous meat dishes and the inclusion of wheat and dairy products. Cuisines of the Mexico takes you on a journey of the rich culinary landscape, as well as introduces you to the people, festivals, and regional life of Mexico. All the original recipes are specially chosen by Julia Fernandez, a Mexico City native. Her detailed, step-by-step instructions are accompanied by lush color photos to help you achieve the best results. Cooks of all levels will want to prepare entire Mexican meals to enjoy with family and guests for all occasions.
