Dug into the library book sale bag, I read cookbooks like novels, when I looked up the author Bernard Clayton was sorry to hear of his passing. Clayton gives great history and excellent recipes. Each recipe gives a detailed description in stages of how to prepare pastry, what I love is that it also gives the estimated time for each stage. Has a excellent recipe for linzer tart with raspberry filling the addition of a half cup applesauce to the raspberry jam in the filling was a winner. I had canned applesauce and raspberry jam so thought let's give one of these recipes a test run. Definitely a keeper several more recipes I will be trying.

This book was given to me as a gift, some 25 years ago. At the time, I had my favorite go-to pastry recipe and everything else seemed too complicated. Then, about 5 years ago, I rediscovered this book and really read it. That started me on a journey. He explains the science of pastry in a way that completely demystified the whys and wherefores of the differences in pastry. I already had confidence in my abilities as a baker, so I was able, comfortably, to explore outside my experience & expertise. Found a few recipes in this book that I found nowhere else. This book is a treasure!

Good for its time, I'm sure. Selling it because I have better resources now and limited shelf space.
