I've probably had this book for about 20 years. It's the only cookbook I have gone back to over and over again. By far, one of the best cookbooks for healthy eating I like. She doesn't give the nutritional data in the recipes but she does add the exchanges in them. Most of these recipes are diabetic friendly. My hubby's favorite dish I think in this book is the Spaghetti Pie. My grown boys still get excited when I make the Peanut butter surprise muffins. This book is older and alot of things have changed over time. I now have added to my lifestyle fermented veggies and milk. She does use yogurt quite a bit in her recipes. Other than that what is in this book is still what science today, doctors and nutritionists still say is healthy eating. A lot of the recipes are tasty. She is big in fiber, such as whole grains, lean meats and vegetables, so if you are a paleo person, this book my not be for you. It is one of the easiest books to understand w/o tons of dribble. If you can find the book, I hope you enjoy and benefit from it as much as our family has.
Although this book has a beautiful cover with lots of healthy foods, it is not my idea of healthy as far as the recipes and recommendations go. And there are only 13 veggie recipes. Pretty but poor...
This is a great little book that covers the basics of nutrition. There are two sections, one about basic principles about nutrition and a section for recipes.
