I've had this cookbook for over 10 years and it was old when I got it. I finally looked through it today for some recipe ideas and saw this cookbook is so very 1994. Most recipes omitted egg yolks and I use the whole egg. Also, I was told to saute my onions in cooking spray. I think not! Eww! I also don't know that using turkey substitutes for lean beef is exactly a good thing
I wouldn't mind trying some dishes that are lower in fat but nothing jumped out at me to try. There was one dish that looked okay but had way too much dairy for me. This is going back on my shelf. (Mmmm, smell those skin-on chicken wings sizzling in the oven, about to be drenched in Frank's wing sauce. . .shhhh. . .don't tell the author of this book. )
I bought this book many years ago, sometime in the '90's. I had read Shape magazine and Evelyn Tribole would "makeover" a recipe. She always shared her strategy. I like many of the recipes such as Green and White Lasagna bundles and continue to have them in rotation.
More importantly I remember the author's suggestions for cutting fat and I use the same methods in other recipes when I can.
I love this cookbook! It has easy to make recipes for many of my comfort food favorites---mac and cheese, turkey tetrazzini, cornbread stuffing. What's amazing is Evelyn Tribole has cut out significant amounts of fat without sacrificing flavor. Many pages of my copy bear the proud food stains of a well loved and well used cookbook. I'm sad this book is out of print, but happy to report she's published a followup, More Healthy Homestyle Cooking, that is easily available.
If you ever see this cookbook at a used book store---snap it up!
I have made many of the recipes in this book and I'm convinced that this woman is a GENIUS! Everything tastes great and none of the recipes have fake food (artificial sweetener and the like) in them.
