Im neither vegan nor vegetarian, but these delicious meals are easy and husband-approved so Ive tried a dozen recipes. This is a really nice way to increase vegetables in your diet without sacrificing taste or adding unwanted fats.
I have been an on/off plant-based eater for over 10 years. During that time, I have accumulated many vegan and/or plant-based books. Although I've learned something new from all of them, none come close to the immediate usefulness of this book. The recipes are straightforward, use a realistic amount of ingredients, and most are quick enough to make on a weeknight. Bonus: Most of the ingredients are items I already keep on hand, or they are easily purchased. The author also repeats a lot of ingredients, so there's almost no buying a fancy ingredient for one recipe. I cannot recommend this book enough. Favorites include the Cozy Pumpkin Bowl, the Cinnamon-Spiced House granola, and the Sweet Potato Rosemary Bisque.
