Im neither vegan nor vegetarian, but these delicious meals are easy and husband-approved so Ive tried a dozen recipes. This is a really nice way to increase vegetables in your diet without sacrificing taste or adding unwanted fats.

I have been an on/off plant-based eater for over 10 years. During that time, I have accumulated many vegan and/or plant-based books. Although I've learned something new from all of them, none come close to the immediate usefulness of this book. The recipes are straightforward, use a realistic amount of ingredients, and most are quick enough to make on a weeknight. Bonus: Most of the ingredients are items I already keep on hand, or they are easily purchased. The author also repeats a lot of ingredients, so there's almost no buying a fancy ingredient for one recipe. I cannot recommend this book enough. Favorites include the Cozy Pumpkin Bowl, the Cinnamon-Spiced House granola, and the Sweet Potato Rosemary Bisque.

This book had about 50/50 appeal to me, which is high praise for a vegan and oil free cookbook. I’m planning to save some recipes for the future.

Don’t miss this book

If you are seeking a plant based diet that tastes good don’t hesitate to buy this book you will not be disappointed.

The desserts look very upsetting, but the meals are refreshing and filled with fresh ingredients!
