Various is the correct author for any book with multiple unknown authors, and is acceptable for books with multiple known authors, especially if not all are known or the list is very long (over 50).
If an editor is known, however, Various is not necessary. List the name of the editor as the primary author (with role "editor"). Contributing authors' names follow it.
Note: WorldCat is an excellent resource for finding author information and contents of anthologies.
I'm not sure how I would star rate a book like this, so I won't, soz Rhys. Well this was a charity shop gift from my dad on Chistmas day which I devoured on a stormy boxing day. Some of it was funny, some was outdated and I guess there was the odd tidbit of useful info. My boyfriend would be glad to hear that psd scored out 'how to date 3 people at once' on the cover, awww. It was a nice relaxing read by the fire.
This book is hilarious and just academic enough to actually provide useful information to an incoming (or current) college student. It gives advice, along with graphics, on everything on how to make t-shirt curtains to writing a last minute paper. I purchased it for a high school grad and can't wait to gift it!

My Mom got me this book last year for laughs, but I sat down and re-read it because I'm finally college-bound this year. (Side note: this was the only edition on Goodreads I could find of this Survival Guide, and my copy does not say 'University' across the front, it says 'College'. Then again, I am America. So.) Let's be absolutely honest with ourselves here: most of this stuff was really silly, or just out of date. Which is sad, as this was published in what, 2004? But honestly, who is going to write their parents a hand-written note for money? Just email them, they'd be less worried. And no one, I repeat, no one living in a dorm is going to have an answering machine. This isn't the 90s.
As I'm not going to be living in a dorm, I found the first chunk of the book pretty much useless. Some of the tips, particularly the ones about studying, were pretty useful though. It was good for a quick read through and a few chuckles, but I wouldn't suggest going out and picking up a copy for yourself. Wait for some earnest-while family members to gift it to you, then use it to hide your cash or drugs or whatever from aforementioned earnest-while family members when they come to visit you.
