Various is the correct author for any book with multiple unknown authors, and is acceptable for books with multiple known authors, especially if not all are known or the list is very long (over 50).
If an editor is known, however, Various is not necessary. List the name of the editor as the primary author (with role "editor"). Contributing authors' names follow it.

Every year I like to try and read something festive in December. That usually means I have to pick up a book aimed at younger readers. (Side note: There needs t be more Christmas novels in general.) This was my pick for 2021 and I'm not even remotely disappointed at getting to read lots of short little bursts of festive literature, especially when it consists of stories I have never had the pleasure to read until now.
