A useful book to help use all those food storage beans. I've had the white bean brownies....and they are really good. You'd never guess they were made with white bean flour!

Many recipes and a few good uses of beans. I was particularly interested in uses for bean flour.

This book has a lot of really great ideas for using beans . . . it's just that none of the recipes really appeal to me. But the concepts are good, and I'm glad I read it.

Concepts I liked:
•Adding mashed beans to baked goods to replace some of the fat/eggs
•Adding bean flour to baked goods (I tried some in waffles and it worked beautifully. She suggests no more than 1/4.)
•Using bean flour to make instant mashed beans.

It's a great book for getting to know how to cook beans and use them in a lot of dishes.

I know this is a cookbook, but it's so unique. Using beans and bean flours to sneak into your families diet. I've been using recipes from this book for years and it's great!
