Many recipes...
I was surprised to learn that many of the chicken based broths use pork bones along with the chicken bones. I don't eat pork, so I won't be using these recipes. And I won't be eating at any ramen restaurants without asking many more questions. The homemade noodles use !ye. Not in my kitchen.
