This cookbook is vegan, but it's not healthy. Too many missed opportunities to suggest healthier options in the recipes. For example, date paste as an option to the listed "white" sugar in the recipe, whole wheat pasta or chickpea pasta vs "pasta", saute veggies in broth or water as options instead of the listed oil.
The book had some really good guidelines in the beginning section of the book, but a second person must have developed the recipes, because the recipes didn't follow the same guidelines.
The recipes are easy and use normal ingredients! There are many favorites made vegan in this book! This cookbook is definitely going to be used a lot at our house!
