A reread for January 2023
I've upped my rating to 5 stars. I've been really enjoying revisiting this wonderful book. Have been working my way through the ones I have already tried and have been trying ones I previously hadn't.

I've tried dozens of recipes for onion bhajis, tried one from this book last night and they were amazing, the best I've eaten. These turned out light and golden and the way this book suggests cooking them means they come out like crispy lattices. I have also used dozens of recipes for sag aloo, tried this one and again it was up there with the best and definitely top marks for crispiness. I love that this book has lots of good flavour ideas and cooking techniques, it means you can easily tweak the recipe for what you have around or use ideas for making your own dish.

A great selection of vegan Indian recipes accompanied by mouth watering photography. I'm a huge curry fan and enjoy nothing better than settling down to a good few hours curry prep for a Saturday night so was really excited about this collection of recipes.

I found one downside to some of the recipes, they are too lemony for my taste, even a family member who isn't sensitive to lemon/sharp tastes found the lemony/sharp taste too overriding in some of the dishes that used this. I tried these recipes again and used a fraction of the lemon juice/ white wine vinegar suggested and they were amazing, so I would recommend these recipes with the caveat that you should go easy on the acidic elements of the dish.

I loved the technique suggested for cooking an aubergine, this gave an amazing smoky taste to the dish and was a great way to cook the aubergine without it absorbing lots of oil. The smoky aubergine curry was delicious, especially on the second attempt where I used less lemon juice. I tried several of the main curries and sides, all great providing I used less lemon juice/vinegar. I tried one curry that used vegan yogurt that I really didn't expect to like but it was delicious. I'm really looking forward to getting back to trying more from this book and honing my curry-craft further!

I've done maybe 5 things so far. All excellent and really good spicing and flavour IMHO. I know a few others who use it and we all love it. Highly recommended.

Love the dal section of this lovely cookbook. The chana masala, chana Dal and dolly's Dal were bursting with flavour. I suppose the only downside is that a few of the recipes taken a long time to make, but very much recommended

This is a great vegan Indian based recipe book. Great sections on Dhals, breads, and many other mainstays of North and South Indian cuisine.
