ONE OF THE MOST ANTICIPATED COOKBOOKS OF 2022— Delish, Food52
Whether you’re new to plant-based eating or already a convert, when you cook vegan with Charity Morgan, private chef to elite athletes and rock stars, you may be leaving out the meat, dairy, and eggs, but you won’t be missing out on the flavor and indulgence of all your favorite comfort foods.
In her highly anticipated first cookbook, Charity lays out a plan for anyone who wants to eat less meat—whether they are looking to go completely vegan or just be a little bit more meat-free. Pulling inspiration from her Puerto Rican and Creole heritage as well as from the American South, where she lives with her family, Charity’s recipes are full of flavor. Think Smoky Jambalaya; hearty Jerk-Spiced Lentils with Coconut Rice & Mango Salsa; Jalapeño-Bae’con Corn Cakes with Chili-Lime Maple Syrup; and a molten, decadent Salted Caramel Apple Crisp.
Unbelievably Vegan offers more than 100 recipes for living a meat-free life without giving up your favorite comfort foods. Charity guides readers on how to use oyster mushrooms to stand in for chicken and how to spice walnuts to taste like chorizo! She proves that vegan food can be fun, filling, healthy, and above all else unbelievably delicious.
I first became aware of Ms. Morgan in the terrific documentary, The Game Changers, and was excited that she was doing a cookbook, since ALL of her food featured there looked ... wait for it - unbelievably delicious. And the recipes in the book are definitely flavorful and incredible, without being fussy or overly complicated. But beyond that, her dedication and commitment to vegan eating is palpable and infectious - without being preachy; she's nothing if not inclusive and welcomes everyone, wherever they are in their own journey toward nutritional health. Just look at that gorgeous cover and tell me that doesn't make you want to 'have what she's having'!
I am not vegan but eat plant based meals 2-3X per week. I thought my pantry was well stocked but found several of these recipes needed a special, hard to find ingredients - marmite, lobster mushrooms, sazon seasoning
Other than the Truffle Mac & Cheezy (where I did buy truffle salt and truffle oil) I wasn’t inspired to make any of the mains. This was mostly about the condiments: Citrus-Miso dressing was amazing! Jerk and Taco seasonings were both flavourful.
Private chef to athletes and from the excellent documentary "The Game Changers," Charity Morgan packs a punch with this new vegan cookbook. I have so many recipes I want to try from this, from garlic ramen noodles to the spicy crab dip to the no-bake peanut butter cheesecake. I also really appreciated the opening chapter on sauces and dressings to add to my favorite recipes.
My only caveat was that there were a lot of recipes featuring tofu (which I can't eat), but regardless there was plenty for me to find in it, and if soy isn't a concern for you then you'll find even more than I did! It's definitely one to check out!
Some interesting recipes but ultimately most just aren't quite my style or I already have a recipe for it with simpler ingredients. Some recipes just had ingredients that would be hard to find or too expensive or time-consuming. Nicely set up and great photos and introduction to eating vegan. A bit too much name-dropping.
If you haven’t watched the documentary “Game Changers” on Netflix, I’d highly recommend it! The author of this cookbook is featured in it along with her husband. Another good one is “What the Health!”. I took my time transitioning into a vegan lifestyle because it is something I hope to stick with. It can seem daunting, at first, but the benefits are worth the effort!
Charity Morgan has given us a great new set of vegan recipes — in a warm, affable presentation — that aren’t overwhelmingly difficult but also don’t cut corners on flavor and quality. I can’t wait to work my way through the recipes in this.
I was hesitant to try a vegan cookbook but I think I walked away with some recipes I might actually try! One thing I did not like were the recipes that called for ingredients so special they are only available online.
Some neat ideas, but many of the recipes require expensive ingredients and are very labor intensive. I would definitely like to eat many of these foods at a restaurant, but can’t see how they would be practical home recipes
Have you ever thought about eating less meat and don’t know where to start? Maybe it’s a bit overwhelming? I know it has been for me. Every time I think about consistently adding vegetarian meals, I don’t know where to start and get overwhelmed, especially since I have family members who insist that all meals should consist of a meat for protein. Charity Morgan’s UNBELIEVABLY VEGAN can help with that. From her introduction to the recipes, Morgan gives us the tools to become less dependent on animal products and more plant-based, or plegan as she calls it. She isn’t preachy and doesn’t insist that everyone must follow it, but she gives you the tools, including questions to consider on your journey. Morgan also discusses things you should have in your kitchen to be successful and points you to the section that allows you to make mix and match bowls as an easy place to start. Full of beautifully photographed recipes that look and sound delicious, UNBELIEVABLY VEGAN give you a place to start, whether your goal is to become fully Vegan (Plegan) or to have more plant products and less animal products in your diet. Morgan’s goal is for you to create meals that are so flavorful and flexible that no one will miss the meat. I am hoping that I can slide many into our regular rotation and make my family realize that there are tasty options out there. I think the Taco Salad in baked tortilla bowls (page 152) and the Vegetable Pho (page 183) are going to be tops on our list. Every time I flip through, I find more recipes I want to try! I highly recommend this cookbook, even if you have no plans to make lifestyle changes. These recipes will fit into your life no matter the stage. Thanks to Clarkson Potter for the gifted copy. This cookbook by a plant-based chef is a welcoming, friendly approach to eating vegan. It's even great for those that aren't 100% vegan but wanting to have some meat-free days. Charity provides the knowledge and essentials needed for preparing vegan meals that are satisfying and family-pleasing. I'm amazed that she has come up with many recipes with great flavors where one won't miss not having meat and dairy. Many comfort foods we've grown up with are provided with recipes for vegans. I zeroed in on the walnut chorizo. Just wow. I wouldn't miss the real chorizo with this recipe with fantastic flavor. This can be used in the breakfast taco recipe provided in this cookbook. It's very satisfying and filling. For those craving curry, the pumpkin red curry rice bowl looks really good. The photos throughout are very eye-pleasing. If you're wanting a go-to vegan cookbook, this is an excellent one to have on hand. I've received a free copy from Clarkson Potter in exchange for a free and unbiased review.
This is excellent. Charity Morgan’s writing voice and approach is welcoming and warm and the food 🤤
I think vegan food has a reputation for being boring and bland, but these recipes are anything but. I’m looking forward to cooking my way through. The walnut chorizo is particularly versatile and it’s weird to be excited for fake sausage, but here I am!
I reviewed it for Shelf Awareness (I received an early copy from the publisher) and this isn’t that review :)
Private chef to athletes and from the excellent documentary "The Game Changers", Charity Morgan packs a punch with this new vegan cookbook. I have so many recipes I want to try from this, from garlic ramen noodles to the 'hot krabby dip' to the no-bake peanut butter cheesecake. I also really appreciated the opening chapter on sauces and dressings to add to my favorite recipes. Definitely one to check out!
I've made the Cinnamon Matcha Overnight Oats, Cacao-Nut Butter Overnight Oats, and the Chilaquiles with Tofu Scramble. All tasty, especially the latter two. I also want to make the faux eggs benedict and her Chocolate Chip Banana Bread.
Overall a creative, tasty book, but I didn't find myself wanting to keep many of the recipes (I borrowed this from the library), and she relies on a lot of processed food.
I LOVED this book. I've been vegan for 20 years, and I still learned so much from Charity -- she introduced ways to build flavors, different spice blends, and novel cooking techniques. I also really appreciated her practical and welcoming approach to veganism. The world is full of vegan police telling others that they're doing their veganism wrong, when really, the animals and the planet just need more of us eating more plant-based and vegan foods.
I started eating plant-based in August, and I’ve tried about 75% of the recipes so far—I have yet to find one that’s not delicious. It takes time to cook, and time to find some ingredients, but the investment in my health is worth it. I feel so much better eating plant-based, and I hope she writes another cookbook.
This book is a welcoming place to start/develop your plant forward/vegan/Plegan cooking journey. Great philosophy, yummy recipes, and user friendly layout and content! I appreciate the amount of photos as well. I am looking forward to trying the recipe for Shitake Bae'con.
I am not vegan but I am trying to eat less meat. What a delight this book is. It is very informative and is packed with recipes that I am dying to make. Most of all this book is bright, beautiful, joyful and full of fun.
Great cookbook, I'll be using for many many years. I love how it is laid out using an athletic take in the table of contents. we've tried many of the recipes and they are big on flavor and substance.
This looks like it has some flavorful stuff in it, especially the sauces, but I was a bit disappointed because it used processed items and seemed like just another vegan cook book that is trying to re-create typical meat dishes. How about a plant-based cookbook that does NOT use processed stuff?
Cookbook by chef featured on Game Changers. The first 50 pages are interesting. Most of the recipes use oil, but I did flag a few of interest - marinade, pickled red onions, chickpea omelets, eggless French toast, immune boosting soup.
So many yummy looking recipes but as I’m not vegan, just vegan curious I probably won’t be making all of these myself. I did save one recipe for making in the future but if I ever do decide to go vegan I’ve got this book saved for ‘just in case.’
Yum! Doesn’t lean too heavily on analogs, lots of creativity. Some things are not for me or too fussy but the majority of the recipes are approachable. Contemplating if this is one I want to add to my permanent shelf!
I checked this book out of the library, but there are so many little slips of paper between the pages marking recipes that I absolutely must try, that I think I need to buy a copy! Plus, she has a recipe for vegan heavy cream that does not contain coconut milk!
This cookbook is already stained with adobo Chile sauce and has nutritional yeast in the cracks I've used it so much. These recipes are ridiculously good even if you're not vegan. That nacho sauce has become a staple in our house. I LOVE this cookbook (chefs kiss)
