Long-Winded, Too Detailed Intro; Recipes Look Fine
This book has a surprisingly long introductory section describing many aspects of sourdough baking. So much so, that I think the beginners this book is intended for may come away more confused than enlightened. The author talks of things like hydration ratios, types of sourdough (which I'd never heard of before!), and other things the beginning sourdough baker most likely doesn’t need to know... at least not until further in their sourdough baking journey. In fact, the first part of the book reads like someone’s research paper on sourdough baking rather than a proper cookbook... and certainly not "simple" as the title states. The author also makes some outrageous statements, starting with the first line of the book about the benefits of bread being talked about everywhere. Actually, with the popularity of the keto and the Paleo diets, bread is greatly reviled these days. Not by me, obviously. I’ve been baking sourdough items for decades, and I have some quibbles about the supposed “requirements” of sourdough starters and baking. If you are already a baker, you probably have all the tools you need to start baking sourdough. If you want to buy some baking-specific things later, like a lame or proofing basket, you can. But to begin working with sourdough, you most likely have all you need on hand. And don’t worry about hydration ratios when you start; that’s something you can delve deeper into later. Just dive in with the sourdough baking if it interests you… and you’ll figure out what knowledge and equipment would make the baking experience better for you.
Despite all that I didn’t like about the introduction, the recipes themselves sound tasty. The pictures (one for each recipe) look good, too. I did find some misspellings here and there (“savoy” instead of “savory”). If you pick and choose what’s relevant to your experience and interest in the “research paper” intro, you may find the recipes good ones to try on your sourdough journey.

I loved this book! I went into it already having some medium knowledge of sourdough bread, I’ve made several loafs but I haven’t mastered the classic sourdough bread. It’s always either too hard or too chewy. This book has several tips that I think might be helpful and it does a great job at explaining the science and chemical reactions of baking sourdough bread. It definitely got me excited to try again and hopefully try some of the recipes it has as well in the future. I borrowed this book using my “Prime reading” benefit but I’m considering purchasing it so I have my own copy
Recipes need editing. Asking for dry ingredients to be measured in liquid measurement and for ingredients like sugar to be added that are not in ingredient list and have no measurement reference. Worthless book, has poor, erroneous directions and is supposed to be for a beginner.
A comprehensive look at sourdough bread, cakes, pizzas, crackers and many other lovely things, accompanied by photographs. The reasons behind for doing things like cutting the surface and using a banatton basket, I'm looking forward to my first try at making a recipe.
This is a great book for anyone interested in the sourdough adventure. The instructions are clear and concise. I can't wait to make several of these recipes. Thank you for this book!
