Various is the correct author for any book with multiple unknown authors, and is acceptable for books with multiple known authors, especially if not all are known or the list is very long (over 50).
If an editor is known, however, Various is not necessary. List the name of the editor as the primary author (with role "editor"). Contributing authors' names follow it.

There are some lovely poems in this collection but I'm rating it a 2 because some others didn't really fit the bill and brings the score down. The sections that divided the poems I don't believe did much. *** If you're interested in a book like this, I recommend "Art and Nature: An Illustrated Anthology of Nature Poems"
Got this little book of poems free at the bookstore and was sorely disappointed in the stodginess of the poems chosen. Some even invoked religion. There were a few I enjoyed but would have been more satisfying if some more modern poems were included. ANY more recent poems in today’s English would have been a plus.

i do agree with the other reviews - the poem selection isn't the best, but overall i felt the spirit that they intended to convey. it was a great experience!
