Morgan isn't kidding when she says this book is everything you need to know. She discusses farmed vs caught, species, and butchering a salmon. Do you "butcher" a salmon? I don't know, but after reading this book, you'll be able to cut one apart expertly. The recipes look delicious and many contain photos. There are some really interesting ones that I can't wait to try. There is only one recipe missing. That wonderful sauce for smoked salmon that some guy up in Lund, Canada makes. I'll keep searching.
I eat salmon at least once a week, so this cookbook is a fantastic addition to my salmon recipe collection. I’ve made most of the recipes in the past six months and most are delicious. I also like the wine pairing suggestions that come with each recipe.
I didn't read all the recipes in here and I didn't try any of them yet, but it looks as if there are some good ones in this collection, so I'm including it on my list here for future reference.
Extremely informative and helpful. I don't live in a place where I can get super fresh fish, but this still extremely helpful to read. The recipes sound delicious too.
