Northwest Culinary Academy of Vancouver, BC, Canada, is an intimate, chef-owned cooking school that is far more atelier than institute. Since 2004 it has earned a reputation as a unique and contemporary place of education, proof that big and new ideas still (and perhaps best) come from one-of-a-kind small entities.
The Northwest Method is the culmination of information, ideas and learning strategies developed through the many years of collaborative kitchen and classroom experiences between the teachers and students (pro and enthusiasts). In both style and content, this work is a representation of Northwest Culinary Academy’s pedagogical values, how teachers and students can indeed collaborate with ingredients, tools, and learning strategies in changing times.
